Taco soup is a hearty, versatile soup with the strong flavors of Mexico
- 1 pound ground beef or ground turkey breast
- 1 can (15 ounce) stewed tomatoes, any flavor
- 1 can (15 ounce) stewed tomatoes (Mexican flavor)
- 1 large onion, chopped
- 1 package (1 1/4 ounce) taco seasoning mix
- 1 package (1 1/4 ounce) hidden valley ranch dressing mix
- 1 can (15 ounce) hot chili beans
- 1 can (15 ounce) pinto beans
- 1 can (15 ounce) whole kernel corn

Prepare pasta according to package directions: drain place in a large mixing bowl
- 1 (16oz) Package Elbow Macaroni
- 2 tsp Italian Seasoning
- 2 (10oz) Bottles Alfredo Sauce
- 3 Cups Cooked Chicken
- 1 Cup Sour Cream
- 2 Eggs, beaten
- 1 1/2 Cups Ricotta Cheese
- 1/4 Cup Parmesan Cheese
- 2 tsp Minced Garlic
- 1/4 Cup Fresh Parsley
- 1 14oz Can Diced Tomatoes, drained
- 2 Cups Mozzarella Cheese
- (Serve with Garlic Bread)
Pineapple Upside-Down Muffins

Preheat oven to 400°F. Coat 12 muffin cups with cooking spray
- Topping
- 2 tablespoons packed light brown sugar
- 2 tablespoons chopped walnuts, or pecans (optional)
- 1 (10-ounce) can pineapple slices

- 3/4 cup whole-wheat flour
- 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon

- 1/2 cup packed light brown sugar
- 1/4 cup canola oil
- 2 tablespoons pineapple juice, or orange juice
- 1 teaspoon vanilla extract

- 1/2 cup old-fashioned oats

Southwestern Chili Con Queso Pasta Bake

Preheat the broiler to high and position the rack 8 inches from the heat
- 1 pound penne rigate (ridged penne)
- 1 1/2 pounds ground beef
- 1 tablespoon ground cumin (1 palmful)
- 1 tablespoon roasted ground coriander (1 palmful)
- 2 tablespoons chili powder (2 palmfuls)
- Coarse black pepper
- 1 large yellow onion, chopped
- 3-5 garlic cloves, chopped (we really like garlic so I put in more, the recipe calls for 3)
- 1 jalepeño
- 2 tablespoons butter
- 2 tablespoons all-purpose flour (2 palmfuls)
- 2 cups milk
- 3/4 pound cheddar cheese (about 2 1/2 cups)
- 1/4 cup fresh cilantro leaves (a generous handful), chopped
- 1/2 cup fresh flat-leaf parsley leaves (a few handfuls) chopped
- 1 14-ounce can diced fire-roasted tomatoes

- Cream Cheese Frosting:
- Red Velvet Cake
- 1 (16.25 oz) box super moist white cake mix (or sugar free white cake mix)
- 1 1/4 cup reduced fat buttermilk (*See Note Below)
- 1/2 cup low fat vanilla or plain yogurt (i used vanilla Chobani)
- 3 egg whites
- 1 large box vanilla sugar free pudding mix (2 tbs for the cake, save the rest for the frosting)
- 2 tbs cocoa powder
- 1 tbs red food coloring
- (Note: The buttermilk gives the cupcakes a slight tang that is found in a traditional in red velvet cake , if you don’t care for that, you can replace the buttermilk with water!)
- 1/2 cup skim milk (or milk alternative)
- remainder of vanilla pudding mix (listed above)
- 1 (8oz) package 1/3 less fat cream cheese, softened
- 1 cup light cool whip (or Truwhip for a natural alternative)
