Mix corn flakes, ranch and parmesan cheese in a bowl
- 1 cup crushed corn flakes
- 1 pkg. ranch style dressing (dry mix)
- 3/4 cup parmesan cheese, grated
- 1/2 cube butter
- 8-10 boneless skinless chicken breasts tenderloins

It's fantastic and I highly recommend topping it off with pineapple juice!
- The recipe:
- 1/2 ounce Blue Curacao
- 1/2 ounce Banana liqueur
- 1/2 ounce Melon liqueur
- Fill Sprite
- Typically garnished with a cherry
Southwest Chicken Salad

1 Combine all chicken salad ingredients in bowl and mix well
- 1 lg chicken breast, chopped (smoked, bone-in with skin on); remove skin and bone before chopping
- 1/2 c onion, chopped
- 1/3 c red bell pepper, chopped
- 1/2 c fresh cilantro, pulled from stem then chopped
- 1/8 c canned black olives, chopped
- 2 pickled jalapeno peppers, chopped
- 1 canned chipotle pepper in adobe sauce, chopped
- 1/4 tsp ground cumin powder
- salt and pepper, to taste
- 3/4 c mayonnaise (more if needed, to moisten the above ingredients)
- BREAD
- cheddar jalapeno bread or hard sandwich rolls for eight sandwiches
- garlic powder
- cooking spray
- GARNISH
- peach slices, pineapple slices, or avocado

In a small bowl, mix the Greek yogurt and chives
- Chive Spread
- 1/4 cup Greek yogurt
- 1 tablespoon finely chopped fresh chives
- Salt and pepper, to taste
- Avocado Salad
- 1 avocado, peeled, pitted and diced
- 1 tomato, cored and chopped
- 1 cucumber, peeled, seeded and diced
- Squeeze of lime juice
- 2 tablespoons chopped fresh basil or cilantro
- Salt and pepper, to taste
- 4 slices whole grain bread or 4 small mulitgrain tortillas
- 1/4 cup alfalfa sprouts
- 2 to 4 slices lite pepper jack cheese

- Ingredients
- 1 1/2 cup Oat flour (or 1 3/4 cup oats)
- 1/2 cup Vanilla or plain protein powder (or additional 1/2 cup oat flour)
- 1 1/2 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Salt
- 3/4 cup Baking stevia (or 1 1/4 cup sweetener that measures like sugar)
- 2 large Eggs
- 1/2 cup No sugar added applesauce
- 1/2 cup Plain low fat Greek yogurt (or additional applesauce)
- 1 tsp Vanilla extract
- 1 cup Fresh blueberries 1
- 1 If you use frozen blueberries, just let them thaw and drain excess water before adding to the batter.

- 3-4 large whole wheat tortilla’s, or enough to cut out 12 small circles (I prefer low carb/high fiber tortillas)
- 1 cup lean ground turkey, cooked (OR lean ground beef OR 1 cup Morning Star Meatless Crumbles)
- 1/2 cup salsa of choice (I used one with corn)
- 2 tsp dry taco seasoning
- 1/2 cup low fat refried beans
- 1/2 cup low fat shredded mexican blend or 2% cheddar cheese
- Optional Toppings: sliced black olives, shredded lettuce, low fat sour cream, chopped tomatoes
