Chili Lime Chicken

  • 2 boneless, skinless chicken breasts, cubed
  • 2 T. olive oil
  • 1/2 yellow onion, diced
  • 3 cloves garlic, minced
  • 5 roasted green chilis (peeled, seeded, and diced)- or 1 small can
  • Juice of 2 large limes and zest of one
  • 1 large bell pepper (any color), seeded and cut into strips
  • 1 bunch of asparagas, cut into large sections
  • 1 t. cinnamon
  • 1 T. chopped fresh cilantro
  • 1 T. green chili powder
  • 2 t. ground cumin
  • 2 t. Mexican oregano (or regular)
  • salt and pepper



Step 1

In a large sauce pan, heat olive oil over medium heat. Add onions and saute for 2 minutes. Add garlic, chicken and other spices and cook until chicken browns. Add the rest of the ingredients and cover pan with lid. Cook for about 5 minutes, stirring in between.
