Ingredients

  • 4-5

    lb whole chicken, cleaned and dried

  • 1/2

    stick of butter, softened

  • 1

    T. rosemary

  • 1

    T. oregano

  • 1

    T. thyme

  • 4

    cloves of garlic, minced

  • 1

    lemon cut in half

  • Pinch or two of sea salt

  • Pinch or two of pepper

  • 1

    T. paprika

Directions

Heat oven or roaster to 350 F. Mix the butter, rosemary, oregano, thyme, and garlic. Spread it under the skin of the chicken. Place the lemon inside the cavity. Place the chicken on a rack in a roaster. Sprinkle with sea salt, pepper, and paprika. Cook for ~2 hours or until the internal temperature reaches 165 to 170 F.
