Indoor Barbequed Rib Chops

Pork rib chops (not enhanced in salt and water
- Brine:
- 2 quarts of water and 1/2 cup of salt.
- Spice Rub:
- 2 tblsps of paprika
- 2 tblsps of brown sugar
- 2 tsps corriander
- 1 tsp cumin
- 1 tsp pepper
- Sauce:
- 1/2 cup ketsup
- 2 tblsps brown sugar
- 1 tblsps worchestershire sauce
- 1 tblsps dijon mustard
- 1/4 cup molasses
- reserved spices
- 2 tblsps finely grated onion.
- 1 tblsp cider vinegar
- some liquid smoke
Cabbage Roll Casserole

Casserole
- 1 1/2 lbs. ground beef
- 2 medium onions, chopped
- 1 clove garlic minced
- 1 tsp salt
- 1/4 tsp black pepper
- 14 oz can tomato sauce
- 14 oz water
- 1/2 cup uncooked long grain rice
- 4 cups shredded cabbage

Asian-Style Chicken and Pasta

Directions Cook noodles according to package directions
- 2 cups dried Chinese egg noodles or fine egg noodles (4 ounces)
- 1/4 teaspoon ground ginger
- 1/3 cup bottled stir-fry sauce
- 1 cup snow pea pods or fresh sugar snap peas, tips and stems removed, and cut up
- 1 medium red sweet pepper, cut into bite-size strips
- 2 teaspoons peanut oil or cooking oil
- 5 ounces cooked chicken breast, cut into strips (about 1 cup)
- 2 tablespoons coarsely chopped cashews or peanuts or toasted sliced almonds
Bacon-Asparagus Strata

1. Lightly coat a 3-quart rectangular baking dish with cooking spray; set aside
- Nonstick cooking spray
- 8 strips bacon, crisp-cooked, drained, and chopped
- 1 9-ounce package frozen cut asparagus, thawed and well-drained
- 3/4 cup bottled roasted red sweet peppers, drained and chopped
- 12 slices dry white bread, cut into 1/2-inch cubes (about 8 cups)
- 3 cups shredded Swiss cheese (12 ounces)
- 8 eggs
- 3 cups milk
- 1 1/2 teaspoons dry mustard or 3 tablespoons Dijon-style mustard
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
Lemon Avocado Dip

1. In a medium bowl, use a fork to mash avocado with lemon juice
- 1 ripe avocado, halved, seeded, and peeled
- 1 tablespoon lemon juice or lime juice
- 1/2 cup light dairy sour cream
- 1 clove garlic, minced
- 1/8 teaspoon salt
- Lemon wedge (optional)
- 4 medium red, yellow, and/or green sweet peppers, seeded and cut into strips
Fried Deviled Brie

Directions Cut cheese into 8 wedges
- 1 8-ounce round Brie or Camembert cheese, chilled
- 2 tablespoons all-purpose flour
- 2 teaspoons dry mustard
- 1 egg
- 2 tablespoons milk
- 1/2 cup fine dry bread crumbs
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground black pepper
- Oil for deep-fat frying
- Fresh herbs
- 1/2 cup jalapeno or other pepper jelly, warmed

1.In a blender combine strawberries, milk, yogurt, sugar and vanilla
- 4 strawberries, hulled
- 1/4 cup skim milk
- 1/4 cup plain yogurt
- 1 tablespoon and 1-1/2 teaspoons whitesugar
- 1 teaspoon vanilla extract
- 3 cubes ice, crushed
Sesame-Ginger Barbecued Chicken

For sauce, in a small saucepan combine all of the ingredients except the chicken
- 1/3 cup plum sauce or sweet-sour sauce
- 1/4 cup water
- 3 tablespoons hoisin sauce
- 1 1/2 teaspoons sesame seed (toasted, if desired)
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
- 1/4 to 1/2 teaspoon Oriental chili sauce or several dashes bottled hot pepper sauce
- 6 small skinless, boneless chicken breast halves and/or thighs (about 1 1/2 pounds total)
