Chocolate-Pecan Bars

HEAT oven to 350°F. BEAT butter, flour and 1/2 cup sugar with mixer until mixture resembles coarse crumbs
- 1 cup butter, softened
- 3 cups flour
- 2 cups sugar, divided
- 1 pkg. (8 squares) Baker's Semi-Sweet Chocolate, divided
- 1-1/2 cups light corn syrup
- 4 eggs, beaten
- 1-1/2 tsp. vanilla
- 2-1/2 cups chopped pecans
Focaccia Bread

Put the flour into a large bowl and stir in the salt and yeast
- This light Italian flat bread is prepared from a soft dough enriched with olive oil. Traditionally, extra olive oil is sprinkled over the dough before baking—sometimes very generously—but this recipe uses just enough to give a good texture and flavour.
- Ingredients
- 3 cups white bread flour
- 1 teaspoon salt
- 1 envelope (about 7 g) quick-rising yeast
- 4 tablespoons extra-virgin olive oil
- 1 cups tepid water
- 1/2 teaspoon coarse sea salt

1. Preheat oven to 400 degrees F
- Nonstick cooking spray
- 1 cupall-purpose flour
- 1-1/2 teaspoonsbaking powder
- 2 tablespoonssugar or sugar substitute* equivalent to 2 tablespoons sugar
- 1/4 teaspoonsalt
- 1/2 cupfat-free milk
- 2 tablespoonsrefrigerated or frozen egg product, thawed, or 1 egg white, slightly beaten
- 1 tablespooncooking oil
- 1 teaspoonvanilla
- 1/2 cupfresh tangerine sections (2 to 3 tangerines), coarsely chopped
Drunken Fish

Directions 1. Thaw fish, if frozen
- 4 fresh or frozen halibut or salmon steaks, 1 inch thick (about 1-1/4 pounds)
- 3 dried ancho or mulato peppers or 2 to 3 tablespoons chili powder (see tip, page xx)
- 1/4 cup tequila or dry red wine
- 1/2 cup chopped onion (1 medium)
- 2 cloves garlic, minced
- 1 Tbsp. olive oil or cooking oil
- 2 cups chopped tomato (2 large) or one 14-1/2-oz. can diced tomatoes, undrained
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. salt
- 1/4 tsp. ground cumin
- Lime slices (optional)
- Fresh oregano sprigs (optional)
- 3 cups hot cooked rice (optional)
ROASTED MEDITERRANEAN CHICKEN AND VEGGIES

1. Preheat over to 400o. Squash garlic cloves
- 4 cloves garlic peeled
- 1 med. egglplant, cut into 1 in cubes
- 1 each green and yellow zucchini, cut ito i in pieces
- 1 each red and orange sweet pepper, seeded and cut into 1 in pieces.
- 1/2 red onion, cut into thin wedges
