Seared Lamb with Balsamic Sauce

Heat oil in a large nonstick skillet over med-high heat
- 2 teas. olive oil
- 8 (4 oz.) lamb loin chops, trimmed
- 1/2 teas. kosher salt
- 1/4 teas. freshly ground black pepper
- 1 cup finely chopped red onion
- 2 garlic cloves, chopped
- 1/4 cup dry red wine
- 1/3 cup fat-free, lower sodium beef broth
- 2 tab. balsamic vinegar
Savory Chicken with Broccoli and Mushroom

Heat broiler in 3 quart saucepan over high heat, bring 3 cups hot tap water to boil, 3- minutes
- Juice of 1 large lemon
- 1/4 cup all-purpose flour
- 1 teas. paprika
- 2 whole skinless, boneless chicken breast; slipt
- 1/2 cup vegetable oil
- 1 head of broccoli about 1 lb. or 1-10oz broccoli spears
- 8 oz. fresh mushroom; sliced
- 1 tab. dried or frozen chopped chives
Peppercorn-Crusted Beef Tenderloin with Gremolata

Coat each steak with cooking spray; sprinkle evenly with cracked black pepper and 1/4 teas
- 4 (4oz.) beef tenderloin steaks
- Cooking spray
- 2 teas. cracked black pepper
- 1/2 teas. kosher salt, divided
- 4 teas. canola oil, divided
- 1/4 cup chopped fresh flat-leaf parsley
- 3 tab. chopped fresh cilantro
- 1 1/2 teas. chopped garlic (about 1 med. clove)
- 1 teas. chopped fresh oregano
- 1/2 teas. grated lemon rind
- 1 tab. fresh lemon juice
- 1/4 teas. crushed red pepper (opt.)
beef stir-fry/ wok seared lamb

You can use beef or lamb
- 6 tab. extra-virgin olive oil
- 6 cloves garlic, finely chopped
- 1/2 cup fish sauce
- 1 1/2 tab. sugar
- 1 teas. grounded black pepper
- 1/4 teas. salt
- 1 1/2 lbs. beef tenderloin, cut into 1 1/2 inch cube (or lamb, thinly sliced)
- 2 yellow onions, quartered and layers separated
- 1/4 cup cilantro leaves
Creamed Spinach

In large saucepan, combine half-n-half and chopped shallots
- 1 pint half-n-half
- 1/2 cup chopped shallots
- 1/2 stick butter, unsalted
- 1/3 cup grated Parmesan cheese
- 1 1/2 tsp. creole mustard
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper
- 4 lbs. fresh spinach, tough stem removed
Beer Batter

- 1/2 cup self rising flour
- 1 egg white

Lomi Lomi Salmon

Cure the salmon: Mix the salt and sugar in a bowl
- For the salmon:
- 1 cup kosher salt
- 1/2 cup sugar
- 1/2 cup fresh cilantro
- 1 lb. wild salmon fillet (skin removed), rinsed and patted dry
- For the salad:
- 1/4 cup chopped fresh cilantro
- 2 plum tomatoes, seeded and diced
- 4 scallions, thinly sliced
- 1 jalapeno or serrano pepper, seeded and diced
- 1 tab. vegetable oil
- 2 teas. toasted sesame oil
- Juice of 1 lime
- Chopped macadamia nuts, for garnish (opt.)
Bang Bang Shrimp

Make the sauce: Mix the mayo, chili sauce, honey, 1/4 teas
- For the sauce:
- 1/2 mayo
- 1 tab. plus 1 teas. Asian chili sauce
- 2 teas. honey
- Kosher salt
- For the Shrimp:
- Vegetable oil, for frying
- 2 large eggs
- 3/4 cup all-purpose flour
- 1/2 cup cornstarch
- Kosher salt and freshly ground pepper
- 1 1/4 lb. small shrimp, peeled and deveined
- Bibb lettuce leaves, for serving
- Thinly sliced scallions, for garnish
