Blackberry-Rhubarb Cobbler

1. Heat oven to 350 degrees
- 4 cups blackberries
- 4 cups sliced rhubarb (1-inch pieces)
- 2 tablespoons quick-cooking tapioca
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 3/4 cup granulated sugar
- 1 cup old-fashioned oats
- 1/4 cup all-purpose flour
- 1/2 cup light brown sugar
- 5 tablespoons cold butter, cut into small pieces

1. In a large bowl combine the flour, salt, and yeast
- 2 cups all-purpose flour (plus some for dusting)
- 1/8 tsp instant or "bread machine" yeast
- 3/4 tsp salt
- 1 cup water
- 1/2 Tbsp olive oil
- 2 Tbsp corn meal
Chicken and Waffles

For the fried chicken: Thoroughly rinse the chicken, then cover all the pieces with 1 3/4 cups of buttermilk
- Fried Chicken:
- 8 boneless, skin-on chicken thighs
- 2 cups buttermilk
- 2 1/2 cups all-purpose flour, plus more if needed
- 1 tablespoon seasoned salt, such as Lawry's
- 1 teaspoon paprika
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground dried thyme
- 1/2 teaspoon cayenne pepper, plus more if needed
- 1/4 cup milk, plus more if needed
- Vegetable oil, for frying
- Waffles:
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon kosher salt
- 1 1/2 cups milk
- 1 tablespoon vanilla extract
- 4 large egg whites plus 2 large egg yolks
- 8 tablespoons (1 stick) salted butter, melted
- 1 to 2 jalapenos, chopped
- Sauce:
- 1 cup pancake syrup
- 1/4 cup bourbon
- 4 tablespoons (1/2 stick) salted butter
- 1/4 teaspoon cayenne pepper
Orange Crush Buttercream Icing

1. Mix shortening, butter, Orange Crush, salt, vanilla extract and orange extract until creamy
- 1 cup shortening
- 1 cup butter
- 4 tablespoons Orange Crush
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon orange extract
- 2 tablespoons drained juice from mandarin oranges
- Orange cake coloring (such as Wilton’s)
Pork Tenderloin with Apples

- 2 (1 to 1-1/2 lb) pork tenderloins
- 2 Tbsp vegetable oil
- 1-1/2 tsp salt, or to taste
- 2 apples, cored and sliced thick (I like Granny smith)
- 2 yellow or Vidalia onions, sliced
- 1 Tbsp Dijon mustard
- 1/4 tsp ground black pepper

Heirloom Tomato Pie

1. Heat oven to 375 degrees
- 2 1/2 pounds heirloom tomatoes, sliced 1/4 inch thick
- 1/2 teaspoon salt
- 1 refrigerated pie-crust
- 1/4 cup plain bread crumbs
- 8 ounces fresh mozzarella, sliced 1/8 inch thick
- 1/2 cup fresh basil leaves

Old Fashioned Bishop's Bread

1. Preheat oven to 300 degrees F
- 2 3/4 cups sifted flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 6 ounces semisweet chocolate chips
- 1/2 cup chopped pecans
- 1 cup chopped maraschino cherries, well drained
- 1 cup raisins
- 5 eggs

Cheesy Chicken and Rice Casserole

- 2 cups water
- 1 1/2 cup uncooked long-grain white rice
- 3 cups fresh or frozen vegetables
- 1 teaspoon onion powder

Coconut Cheesecake Squares

- Crust:
- Cooking spray
- 1 1/2 cups crushed gingersnap cookies or other crisp cookies (about 24 cookies)
- 1/4 cup butter, melted
- 3 tablespoons sugar
- Filling:
- 3 8-ounce packages cream cheese, softened
- 1 cup sugar
- 2 tablespoons all-purpose flour
- 3 large eggs
- 1/3 cup canned coconut milk
- 2 teaspoons grated lime zest
- 3 tablespoons fresh lime juice
- 2 cups sweetened flaked coconut
