- Brine:
- 1 gallon vegetable stock
- 1-1/2 cups kosher salt
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1 Tbsp dried rosemary

- 2 tsp allspice berries
- 4 bay leaves
