Ham Fried Rice

Cook rice according to package directions (with long-grain white rice it is usually 2 c
- 2 c. uncooked long-grain white rice
- 4 c. water
- 1 tsp. sesame oil
- 2 Tbsp. vegetable oil (only if you REALLY like sesame oil, use 3 Tbsp. sesame oil and no vegetable oil)
- 1 small onion, chopped
- 1 clove garlic, minced
- 1-2 c. cubed ham (you can also use shrimp, chicken, or a combination of all 3)
- Diced veggies or peas (optional)
- 3 eggs, beaten
- soy sauce
Buttered Noodles with Chives

- 1 (12-ounce) package wide egg noodles
- 4 tablespoons unsalted butter, divided
- 1 small shallot, finely diced
- 2 cloves garlic, finely diced
- Kosher salt and freshly ground black pepper
- 2 tablespoons minced chives
- 2 tablespoons grated Parmesan
- 1 tablespoon lemon juice

In a large saucepan, combine all ingredients
- 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
- 1-1/2 cups spreadable chive and onion cream cheese
- 1 cup grated Parmesan cheese
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1/4 cup butter, cubed
- 1/4 teaspoon pepper
Cajun BBQ Cocktail Meatballs

For the Meatballs: Preheat oven to 350° and spray a cookie sheet (or 2) with non-stick spray
- For the Meatballs:
- 2 lbs Ground Beef
- 3 tsps Hot Sauce
- 2 TBS Worcestershire Sauce
- 4 TBS Cajun Seasoning
- 2 TBS Dried Parsley
- 2 tsp Garlic Powder
- 1/2 Cup Diced Onion
- 1/2 Cup Bread Crumbs
- 1/2 Cup Milk
- 2 Eggs
- For the Sauce:
- 2 Cups BBQ Sauce of your choice
- 2 Cups Peach or Apricot Jam
- 2 TBS Brown Sugar
- Dash of Cayenne
Mini Broccoli, Cheddar and Bacon Quiche

1. Preheat oven to 35o degrees F
- 8 large eggs
- 1/4 cup milk
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon extra virgin olive oil
- 1/2 cup finely chopped onion
- 2 cups broccoli florets
- 1 cup cooked, crumbled bacon pieces
- 1 cup shredded cheddar cheese
MARINATED STEAK SKEWERS

In a small bowl, combine all dry ingredients
- 1 lb Steak (I don't remember the cut I used)
- 1 Cup Vegetable Oil
- 1 Tablespoon Worcestershire Sauce
- 1 Tablespoon White Vinegar
- 1 Teaspoon Montreal Steak Seasoning
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Onion Powder
- 1/2 Teaspoon Black Pepper
- 1/4 Teaspoon Salt

Creamy Shrimp and Mushroom Pasta

Boil and salt a large pot of water and cook your pasta
- 4-8 oz fettuccine or linguine
- 10 tbsp butter, divided (I know, but I’ve tried it with less and it’s just not the same)
- 8 oz fresh, sliced mushrooms
- 2 garlic cloves, minced
- 3 oz cream cheese, cut into small pieces
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped (you can use dried herbs if that’s all you have)
- 2/3 cup boiling water (from your noodle pot)
- 1 lb cooked shrimp (feel free to buy frozen-gasp!)
Crockpot Lemon Chicken

dd the sliced onions to the bottom of the crockpot
- 2 onions, cut in eighths
- 3 cloves garlic, peeled
- 8 pieces of chicken, skinned
- salt and pepper
- 1/4 cup Dijon mustard
- 1/2 cup lemon juice (about 4 lemons)
- 1/2 cup chicken bouillon
- 4 sprigs of tarragon (or 1 teaspoon dried tarragon)
- 1/3 cup heavy cream
ENCHILADA PIE

In casserole dish, crush enough chips to cover the bottom well
- 1 lb hamburger, browned & drained
- 1 can Rosarita enchilada sauce
- 1 can cream of mushroom soup (cream of chicken can be used if needed)
- Shredded cheese
- Crushed chips (Doritos or Fritos work well)
Oven-Fried Honey Chicken Nuggets

Preheat oven to 375°F. Line a baking sheet with foil
- 1/2 cup honey
- 2 tablespoons balsamic vinegar
- 1 1/2 cups dried bread crumbs (Panko if you have it)
- Olive Oil cooking spray
- 1 pkg/1 pound fresh boneless, skinless chicken breast, cut into bite sized pieces.
