Orange Chicken

Combine flour, salt, and pepper
- Chicken-
- 2 lbs boneless skinless chicken breasts (cut into 1-1/2” cubes)
- 1 1/2 cups all purpose flour
- 1 eggs (beaten)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Oil (for frying)
- Orange Sauce-
- 1 1/2 cups water
- 2 tablespoons orange juice
- 1/4 cup lemon juice
- 1/3 cup rice vinegar
- 2 1/2 tablespoons soy sauce
- 1 tablespoon orange zest (grated)
- 1 cup packed brown sugar
- 1/2 teaspoon ginger root (minced)
- 1/2 teaspoon garlic (minced)
- 2 tablespoons green onion (chopped)
- 1/4 teaspoon red pepper flakes
- 3 tablespoons cornstarch
- 2 tablespoons water
Cheesecake Factory's Raspberry Lemonade

Bring the cup of water to a boil
- 1 cup water
- 1 cup sugar
- 1 cup fresh squeezed lemon juice
- 1 1/2 cups fresh or frozen raspberries
- Extra sugar for sugaring the rim of your glass
Rasta Pasta

I think I have (temporarily) found my new favorite meal
- ALFREDO SAUCE:
- 1 box (14 ounce) farfalle (bow tie) pasta
- 2 cloves garlic, minced
- 1 tablespoon butter
- 2 cups broccoli florets
- 2 cups packed spinach leaves
- 1 large roasted red pepper (jarred is fine)
- 2 cups cooked chicken, cut into bite size pieces
- 3 cups prepared Alfredo sauce (recipe below)
- 1/4 cup prepared basil pesto
- Makes about 1 1/2-2 cups
- 1/3 cup butter
- 1 tablespoon flour
- 1 2/3 cup whipping cream
- 1/3 cup skim milk
- 1/4 teaspoon oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- Pepper
- 1/3 cup Parmesan cheese, shredded
Parmesan Orzo

1. In small saucepan combine the orzo and butter
- 1 c. Orzo
- 1 Tbsp butter
- 1 can chicken broth
- 1 tsp garlic powder
- 1/2 c. freshly grated Parmesan cheese
SLOW COOKER FRENCH DIPS

Over medium-high heat, heat olive oil in a large pot or skillet
- 2 Tbs. oil
- 2-1/2 to 3 lbs. beef roast
- Salt, pepper
- 2 packages (1-ounce each) dry onion soup mix
- 2 cups water
- 2 cans (14-1/2 ounces each) beef broth
- 1 package (16-ounces) sliced Swiss cheese
- Crusty buns or rolls

In a large pot, melt the cheese and whipping cream together over medium heat
- 18 oz. velveeta cheese, cubed
- 1 cup heavy whipping cream
- 1 pound fusilli pasta, cooked
Chocolate Cupcakes

Preheat the oven to 350˚ F
- 1/2 cup plus 1 tablespoon Dutch-process cocoa powder
- 1/2 cup plus 1 tablespoon hot water
- 2 1/4 cups all-purpose flour
- 3/4 tsp. baking soda
- 3/4 tsp. baking powder
- 1/2 tsp. salt
- 2 sticks plus 1 tablespoon unsalted butter, at room temperature
- 1 2/3 cups sugar
- 3 large eggs, at room temperature
- 1 tbsp. vanilla extract
- 3/4 cup sour cream
HOT ARTICHOKE and SPINACH DIP

Allow cream cheese to come to room temperature
- 1 – (*8 oz.) pkg. Light Cream Cheese ( I like the texture better, regular is fine)
- 1 can 14 oz. Artichoke Hearts, drained, coarsely chopped
- I used Progresso
- 1/2 C. Spinach frozen chopped, or steamed
- 1/4 C. Mayonnaise (do not use Miracle Whip)
- 1/4 C. Parmesan Cheese
- 1/4 C. Romano Cheese (You can use all Parmesan)
- 1 clove garlic, finely minced
- 1/2 tsp. Basil (dry – 1 Tbsp. Basil Fresh)
- 1/4 to 1/2 C. Mozzarella Cheese grated
- 1/4 tsp. Garlic Salt
- Salt and Pepper to taste
Malibu Chicken

Stir egg and 1 tablespoons water together with a fork
- 6 boneless skinless chicken breasts (pound 'em thin)
- 6 slices cooked ham
- 6 slices swiss cheese
- 1 egg
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3/4 cup fine dry breadcrumb
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 1 tablespoon water
- 1 teaspoon mustard
- 1/4 cup mayonaisse

- 1/2-3/4 cup BBQ sauce (depending on how saucy you want it)
- 3/4 tsp. ground mustard
