Taco Pasta

Brown ground meat in large saucepan over medium heat
- 1 Lb. ground turkey or beef
- 1 pkg. taco seasoning
- 1 can mild Rotel (diced tomatoes with green chiles)
- 3 - 4 c. water or low-sodium beef broth
- 1 1/2 - 2 c. small pasta
- 2 Tbl. butter
- 2-3 Tbl. flour
- 1 c. milk
- 1 1/2 c. Cheddar cheese, grated
- salt and pepper, to taste
- chopped cilantro, for garnish, opt.
Creamy Italian Noodles

Cook the noodles about two minutes less than the package directions
- 8 oz package medium egg noodles
- 1/4 c butter
- 1/2 c evaporated mild or half and half
- 1/2 c grated Parmesan or Romano cheese
- 2 1/2 t Italian salad dressing base
REESES PEANUT BUTTER CUP POPCORN

1. Place the popped popcorn in a large bowl and salt to taste
- 8 cups plain popcorn (we use air-popped popcorn)
- Fine salt
- 1/2 cup honey
- 1/3 cup granulated sugar
- 1/2 cup natural peanut butter
- 1/2 teaspoon vanilla extract
- 1/2 cup milk chocolate chips, melted
- 1 1/2 cups Mini Reese's Peanut Butter Cups
Simple Savory Pork Roast

Directions Preheat oven to 350 degrees F (175 degrees C)
- 1 1/2 tablespoons fresh rosemary
- 2 teaspoons garlic salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon freshly ground black pepper
- 3 pounds boneless pork loin roast
Crispy Cheddar Chicken

1. Cut each chicken breast into 3 large chunks
- Chicken:
- 4 large chicken breasts - again, we used chicken thigs (about 9 medium pieces)
- 2 sleeves Ritz crackers - we used one, and it was plenty.
- 1/4 t salt
- 1/8 t pepper
- 1/2 C milk
- 3 C cheddar cheese, grated - we used about 2 cups, and it worked well.
- 1 t dried parsley - fresh outta parsley. random, I know. so we used Italian seasoning instead.
- Sauce:
- 1 10 ounce can cream of chicken soup
- 2 T sour cream
- 2 T butter
Chicken Cordon Bleu

Preheat over to 350. Coat a 7x11 baking dish with nonstick cooking spray
- Sauce:
- 7 skinless, boneless chicken breast halves
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 7 swiss cheese slices
- 7 slices cooked ham
- 1 c. seasoned bread crumbs
- 2 eggs whisked together
- 1 can cream of chicken soup
- 1/2 c. sour cream
- 1 Tbsp. lemon juic
White Chicken Chili

In a large pot, saute the onion and cook until it starts to become translucent
- 1 tablespoon extra virgin olive oil
- 1 medium onion, diced
- 2 cups cooked chicken (I usually use an oven-baked rotisserie chicken from the grocery store to save on time), shredded
- 2 cans Great Northern Beans, drained and rinsed
- 1 can corn, drained
- 1 can (4 ounces) green chilies
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1 box (32 ounces) chicken broth
- Kosher salt (to taste)
- Pepper (to taste)
- 1 lime, juice
MEXICAN PULLED PORK AND PINTO BEANS

Brown the pork well and put it in the crock pot
- 2 pounds (roughly) pork tenderloin
- 1 cup dry pinto beans (no need to soak)
- (1) 4 ounce can of mild green chilies
- 3 teaspoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons salt
- 1 teaspoon dry oregano
- 1 clove garlic minced
- 1 cup chopped sweet onion
- healthy pinch of dry red pepper flakes (optional , see note)
Slow cooker honey parmesan Pork Roast

Spray slow cooker with non-stick cooking spray
- 1 (2-3 pound) boneless pork roast
- 2/3 cup grated Parmesan cheese
- 1/2 cup honey
- 3 Tbsp soy sauce
- 2 Tbsp dried basil
- 2 Tbsp minced garlic
- 2 Tbsp olive oil
- 1/2 tsp salt
- 2 Tbsp cornstarch
- 1/4 cup cold water
Spicy Basil Chicken

Start by heating a large skillet or wok on medium high heat, add the oil
- 2 teaspoons canola or vegetable oil
- 1/2 small onion
- 2-3 cloves of garlic
- 1/4 cup low sodium soy sauce
- 1 teaspoon sugar
- 1 teaspoon corn starch
- 1 1/2 teaspoons Sriracha sauce (more or less depending on how spicy you want it)
