black bean and corn salsa

Gently mix all together in a large bowl and serve (or, put it in the fridge for a couple of hours like I did
- 1 can yellow or white corn, drained (or if you have fresh, that is even better!)
- 1 can black beans, drained and rinsed
- 1 can RoTel diced tomatoes and green chilis
- 1 bunch cilantro, finely chopped
- 1/2 small red onion, finely chopped
- 2-3 green onions, finely sliced
- 1 red bell pepper, finely chopped
- 2-3 Tbsp lime juice
- 1 avocado, chopped (I didn't use an avocado only because I didn't have one on hand . . .)
- 1/2 tsp minced garlic
- small amount of jalapeno, depending on how hot you like it
- dash of cumin
French Bread Pizza

pre-heat the oven to 400 degrees
- 1 loaf French bread (split in half horizontally)
- 1 1/2 cups pizza sauce
- 4 ounces fresh mushrooms (sliced)
- 1 ounce pepperoni (sliced)
- 1 cup mozzarella cheese
- 1 teaspoon oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons parmesan cheese (grated)
Cheesy Ranch Potato Bake

Preheat the oven to 400F
- 4 pounds potatoes, cut into 1/4-1/2 -inch cubes
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 tablespoons butter, cut into small cubes
- 8-ounces Colby-Jack cheese, shredded
- 8-ounces Ranch dressing
- 1/2 pound bacon, cut into small pieces and cooked
Chicken Taco

1. Cut chicken into cubes
- 6-8 chicken breast,
- 1 pkg Lawry's taco seasoning,
- 8 oz sour cream,
- 1 small can green chilies,
- 1 small can sliced black olives,
- 1 can mushroom soup,
- cilantro (to taste),
- monterey jack cheese,
- flour tortillas,
- guacamole,
- chopped tomatoes.
CREAMY PASTA, SAUSAGE AND TOMATO SKILLET

Cook pasta in boiling water until al dente
- 2 1/2 cup mini bow-tie pasta, uncooked
- 1 tablespoon olive oil
- 8 oz smoked turkey dinner sausage, diced
- 1/2 cup onions, diced
- 1 clove garlic, minced
- dash of red pepper flakes
- 2 diced tomatoes (about 1 1/2 cups)
- 1 cup heavy whipping cream
- 2/3 cup Italian cheese blend (can also use mozzarella)
- 1 tablespoon parsley flakes, plus more for garnish
- salt & pepper, if desired
Comforting Cream Cheese Mashed Potatoes | Ezra Pound Cake

Place potato pieces in large pot, and add enough water to cover them by 2 to 3 inches
- 1 1/2 to 2 pounds potatoes, peeled and chopped into small pieces
- 1 teaspoon salt
- 1 tablespoon minced garlic
- 5-6 tablespoons butter
- 1/3 cup milk
- 2 ounces cream cheese
- 1/2 to 1 cup Cheddar cheese
- Optional: chopped bacon, chives

- 1 (16 ounce) package penne
- 12 -15 slices bacon
- 1/2 cup sliced fresh mushrooms
- 2 garlic cloves, minced
- 1 cup grated parmesan cheese
- 2 cups whipping cream
- 1/2 teaspoon pepper
- 1/2 cup sliced green onion
Baked Southwest Cheese Dip

Preheat oven to 350 degrees and spray a 2 quart baking dish with cooking spray, set aside
- 1/2 cup light mayo
- 6 oz. 1/3 less fat cream cheese, softened
- 3/4 cup roasted red bell pepper, chopped (I used jarred but you can char your own)
- 1-2 jalapeno peppers, seeds and ribs removed, finely chopped (use more or less depending on your heat tolerance)
- 8 oz. 2 % reduced fat sharp cheddar cheese, grated
- 8 oz. pepper jack cheese, grated
- 1/3 cup onion, finely chopped
- 1/3 cup cilantro, finely chopped
- 1 tsp. Worcestershire sauce
- 1/4 tsp. ground red pepper
- Pinch salt & pepper (to taste)
- Additional 2 tbsp. cheddar cheese, grated (for topping)
SPINACH AND MEAT LASAGNA

Saute spinach in olive oil with pressed garlic, set aside
- 10oz bag fresh spinach
- 3 cloves garlic, pressed
- olive oil
- 1 lb ground beef
- 1 lb bulk italian sausage
- 1 box lasagna noodles (cooked according to package)
- 7-8 cups spaghetti sauce
- 1 cup ricotta cheese
- 3/4 cup cottage cheese
- 1/2 cup parmesan cheese
- 2 cup mozzarella cheese
- 2 eggs
- salt and pepper
- 1/4 cup fresh parsley, chopped

- 2 medium sized ripe avacados
- 2 tbsp. fresh lime juice
- 1 to 2 cloves garlic, minced
- 1/2 tsp. salt (or more to taste)
- 1 medium tomato, diced
- 1/2 medium onion, diced
- 1 tbsp. cilantro, chopped (or more to taste)
