SOUTHWEST CHICKEN AND CORN CHOWDER

In a large stock pot over medium high heat, combine chicken stock, salsa and cream of chicken soup
- 4-5 cups chicken stock
- 2 ( 10.5 oz.) cans cream of chicken soup
- 1 (16 oz.) jar salsa
- 3 cups cooked, cubed chicken
- 1-2 chilies in adobo sauce, finely chopped
- 2 cups frozen corn, thawed
- 2 (15 oz.) cans black beans, rinsed and drained
- 1/3 cup chopped fresh cilantro
Chocolate-Dipped Peeps

Melt together chocolate chips and shortening
- Peeps (I used 30 Peeps)
- 6 oz. semi-sweet chocolate chips
- 2 T. shortening
Creamy Green Onion Dip

Combine cream cheese and mayonnaise in a bowl
- 2 8-oz. pkgs. reduced-fat cream cheese, softened
- 1 c. fat-free mayonnaise
- 1/2 c. low-fat milk
- 1/2 tsp. Worcestershire sauce
- 2 bunches green onions, chopped

- 1 Tablespoon cooking oil (I use olive or coconut)
THAI CHICKEN PASTA

Cook pasta according to package directions
- 12 oz. uncooked whole wheat spaghetti noodles (or fettuccine)
- 2 cups salsa
- 1/2 cup peanut butter
- 1/4 cup orange juice
- 2 Tbs. honey
- 4 tsp. soy sauce
- 4 cups chicken breast, cubed and cooked
- 1/4 cup chopped peanuts
- 1/4 cup minced fresh cilantro
baked onion rings

Place sliced onions and milk in a bowl and let soak for 1-2 hours in the refridgerator
- 2 vidalia onions, sliced into rings
- 2 1/4 c. whole milk (I'm sure lowfat milk would work just fine!)
- 1/2 c. panko bread crumbs
- 1/4 c. italian seasoned bread crumbs
- 1/4 c. crushed Ritz crackers
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. dried oregano
- 1/4 tsp. cayenne pepper (optional, made it a little bit spicy!)
- Baking Spray
Caramelized Baked Chicken Wings

Preheat oven to 375° F (190° C)
- 3 lb (about 20 pieces) chicken wings
- 2 TBSP olive oil
- 1/2 cup soy sauce
- 2 TBSP ketchup
- 1 cup honey
- 1 clove garlic, minced
- 2 TBSP cornstarch
- salt and pepper to taste
- minced scallion for garnish (optional)
Baby Back Ribs Fall off the Bone

1. Preheat oven to 275F. On the underside of the rib, remove the thin membrane and discard
- 5 pounds baby back ribs
- salt & pepper
- 1/2 cup Thai sweet chili sauce
Slow Cooker Chicken Caesar Sandwiches

1. Place chicken in a 3-4 quart slow cooker, cover and cook on low heat for 6-7 hours
- 2 pounds boneless skinless chicken thighs
- 1 bottle of your favorite Caesar Dressing (I used Brianna's Asiago Caesar) OR 1 (10 oz) can cream of chicken soup plus one packet Caesar Dressing mix
- 1/2 cup shredded Parmesan cheese
- 1/4 cup fresh chopped parsley
- 1/2 teaspoon ground pepper
- 2 cups shredded romaine lettuce
- 12 french hamburger buns or buns of your choice (about 2 1/2 inch)
BBQ Pork Loin

Trim away as much fat from the Pork Loin Roast as you can possibly remove
- 1 large Pork Loin (mine was 2 lb)
- 1 package of Au jus
- 1 Cup of your favorite BBQ Sauce
- Salt & Pepper to taste
- Garlic powder, onion powder to taste
