Oven-Baked Frito Pie

Cook ground beef until meat is browned; drain
- 1 lb. lean ground beef
- 1 can (16 oz) chili beans
- 1 can (8 oz) tomato sauce
- 1 can (15 oz) diced tomatoes
- 1 envelope low sodium taco seasoning
- 1 cup shredded cheddar cheese (2% fat kind)
- 3 1/2 cups corn chips (Frito's)
- 1 1/4 cup fat free sour cream

- 3/4 cup real whipping cream

Spicy Baked Shrimp

1- Combine the first six ingredients in a square oven safe dish
- 1/4 cup olive oil
- 1 tbsp cajun OR Creole seasoning
- 2 tbsp fresh lemon juice
- 1/2 tsp dried parsley
- 1 tbsp honey
- 1 tbsp soy sauce
- 1/2 pound shrimp
Cajun Chicken Pasta

Directions Bring a large pot of lightly salted water to a boil
- 4 ounces linguine pasta
- 2 boneless, skinless chicken breast halves, sliced into thin strips
- 2 teaspoons Cajun seasoning
- 2 tablespoons butter
- 1 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 4 fresh mushrooms, sliced
- 1 green onion, minced
- 1 1/2 cups heavy cream
- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon pepper
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground black pepper
- 2 tablespoons grated Parmesan cheese

- 3 tablespoons vegetable oil

Chicken Bowtie Pasta

1. Heat oil in a medium cast iron skillet over medium heat
- 2 tablespoons extra virgin olive oil
- 2 large chicken breasts lightly seasoned with salt and pepper
- 1 pound mini bowtie pasta
- 2 tablespoons extra virgin olive oil
- 1 medium onion, finely chopped
- 3/4 cup finely chopped red bell pepper
- 2 cups sliced mushrooms
- 2 tablespoons minced garlic
- 4 cups broccoli florets
- 15 ounce can large butter beans or other white bean
- 15 ounce can reduced sodium chicken broth
- 1 cup heavy whipping cream
- 1/2 cup prepared basil pesto
- 1/2 cup grated parmesan cheese
