SKILLET QUESO DIP

Cut the Velveeta into cubes
- 16-ounce box Velveeta Cheese
- 1 c. milk
- 2 teaspoons paprika
- 1/2 tsp. ground cayenne pepper
- 15-ounce can Hormel Chili (No Beans)
- 4 tsp. chili powder
- 1 tablespoon lime juice
- 1/2 tsp. ground cumin
Stovetop Broccoli and Cheese Chicken Pasta

1. Prepare egg noodles according to package directions, drain and run under cool water to stop cooking
- 1 pound thin egg noodles
- 1 stick unsalted butter
- 1/2 cup all purpose flour
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 1/2 cups chicken broth
- 1 1/2 cups shredded cheddar cheese
- 2 cups shredded cooked chicken breast
- 1 pound broccoli florets, steamed
- 1-1 1/2 cups milk
Sassy Steak Marinade and Sauce

Directions Pierce steaks all over with a fork, and place them into a resealable freezer bag
- 1 pound beef sirloin steaks
- 1 tablespoon olive oil
- 2/3 cup cocktail sauce
- 1/4 cup honey
- 3 tablespoons soy sauce
- 3 cloves garlic, crushed
- 1/4 teaspoon seasoning salt, or to taste
- 1 tablespoon olive oil
- 8 ounces sliced fresh mushrooms
Neely's Pineapple Fried Rice

- 1 tablespoon peanut oil
- 1 onion, chopped fine
- 2 cloves garlic, finely chopped
- 1-inch knob ginger, peeled and finely chopped
- 2 green onions, sliced, plus more for garnish
- 1 small red bell pepper, finely chopped
- 4 ounces finely chopped ham steak
- 1 cup finely chopped pineapple
- 4 cups day old white or brown rice
- 1 teaspoon toasted sesame oil
- 2 tablespoons soy sauce
Orange-Glazed Meatballs

In your crock-pot layer all of the frozen meatballs into the bottom
- 20 frozen meatballs
- 1 (12 oz) jar orange marmalade
- 1/4 cup orange juice
- 3 green onions, sliced
- 1 jalapeno pepper, finely diced
Parmesan crusted chicken

Mix together the crackers and parmesan
- 15-20 finely crushed Ritz Crackers
- 3/4 c. grated parmesan cheese (often used for spaghetti or pizza, not to be confused with freshly grated parmesan)
- 1 egg, scrambled
- 4-5 boneless, skinless chicken breasts
Toasted Chicken Salad Bagels

In a bowl combine all ingredients except bagels and chips
- 6 c. Cooked Chicken~chopped
- 2 C. Celery
- 1 C. Almonds~chopped and toasted
- 1/4 C. Lemon Juice
- 1/4 C. Onion~grated
- 1 tsp. Salt
- 2 C. Mayo
- 1 C. Shredded Cheddar Cheese
- 12 Bagels~sliced
- 2 C. Potato chips~crushed
Our New Favorite Chicken Tacos

Heat a big skillet over medium heat, add EVOO, and brown chicken
- Toppings:
- 1 T EVOO
- 1.5 lbs boneless, skinless chicken breasts, cut into small cubes
- 1/2 large onion, chopped
- 1 cup tomato puree
- 1 large clove garlic, minced
- 2 t chili powder
- 1 t ground cumin
- salt & pepper
- 8 jumbo corn taco shells
- shredded cheese
- diced avocado
- diced tomato
- chopped scallion
- shredded lettuce
PB and J Pancakes

Preheat a griddle. In a large bowl, whisk together dry ingredients
- * 1 cup all-purpose flour
- * 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 egg
- 1 cup plus 2 tablespoons milk, plus extra if needed to thin
- 1/2 cup creamy peanut butter, melted
- 2 tablespoons oil
- 4 tablespoons butter
