- 1 inch of ginger, peeled and sliced
- Filtered or spring water
- Juice of half a lemon
- Cayenne pepper
- Powdered or liquid stevia

- 1 can (15.5 oz) black beans, rinsed and drained
- 1 can (15.5 oz) whole kernel corn, drained

- 3/4 c shredded 2 % reduced fat cheddar cheese
- 3/4 c shredded sharp cheddar cheese (I used extra sharp)
- Salt & pepper to taste
- Can substitute RF Mexican Blend

- 1 teaspoon salt
- 2 Tablespoons cilantro, minced
- 1 Tablespoons olive oil
- 2 Tablespoons Lime Juice
- Salad
- 1/2 cup frozen corn
- 1/2 cup black beans, drained
- 1/4 cup diced red or green bell pepper
- 1/4 cup diced red onion
- 1 heaping cup romaine lettuce, cleaned
- 1/2 cup shredded Mexican or cheddar cheese
- 1/2 cup diced tomatoes
- 1/2 cup diced cucumbers
- 1 avocado, diced
- Dressing
- 3/4 cup cilantro
- 1 Tablespoon honey
- 2 Tablespoons olive oil
- 2 Tablespoons Lime juice
- 1 Tablespoon garlic, minced
