Heat 1 inch water (salted if desired) to boiling in saucepan
- 6 medium baking potatoes, cut into 3/4-inch pieces (2 pounds)
- 1 medium onion, finely chopped (1/2 cup) save $

- 3 tablespoons chopped fresh rosemary leaves or 1 tablespoon dried rosemary leaves

- 8 cups fat free chicken broth (low sodium)
- 1 1/2 cups green chilies
- 1 tsp minced garlic
- 1 medium onion, chopped
- 2 pkgs taco seasoning

I love cilantro, so I threw some in with the dressing and blended in my bullet
- Salad:
- 1 cup of chopped leftover grilled chicken
- 2 cups of spring mix lettuce
- 2 cups of chopped iceberg lettuce
- 1/2 cup of diced cucumbers
- 1/2 cup of cooked corn kernels
- 1/2 cup of diced tomatoes
- 1/2 cup of rinsed black beans
- 1/2 cup of small diced avocados
- 1/3 cup of sliced green onions
- 1/2 cup of sliced red bell pepper
- Kosher salt and fresh cracked pepper to taste
- Vinaigrette:
- 1/4 cup of balsamic vinegar
- juice of 1 lime
- 1 tbsp. of honey
- 1 tsp. of dijon mustard
- 1/3 cup of olive oil
- Kosher salt and fresh cracked pepper to taste
