Ingredients

    (15 ounce) can garbanzo beans (chickpeas), drained

  • 1

    (15 ounce) can black beans, drained

  • 2

    ripe tomatoes, chopped

  • ½

    onion, chopped

  • ½

    cup chopped fresh flat-leaf parsley

  • 3

    tablespoons extra-virgin olive oil

  • 1

    lemon, juiced

  • 1

    clove garlic, minced

  • 1

    pinch salt and fresh coarsely ground black pepper to taste

Directions

Combine garbanzo beans, black beans, tomatoes, onion, parsley, olive oil, lemon juice, garlic, salt, and pepper together in a bowl. Allow to sit for flavors to blend, 15 to 30 minutes
