Preparation Heat grill pan over medium-high heat or heat outdoor grill

  • 4 small plum tomoatoes or vine tomatoes, seeded and finely chopped
  • 1 large jalapeno (I use 2), seeded and finely chopped
  • 1/2 small red onion (I used 1), finely chopped
  • A small handful of cilantro leaves, finely chopped
  • Salt
  • 1 lime
  • 2 ears corn on the cob (I used one can)
  • 4 pieces of mahi mahi, 6 ounces each
  • Vegetable oil, for drizzling
  • Salt and Pepper
  • 2 teaspoons Old Bay seasoning
  • 2 cups shredded Monterey Jack cheese or queso blanco or queso fresco (any easy-melting Mexican cheese)
  • 12 6-inch corn or flour tortillas (I use ww tortillas)

In a medium skillet add vegetable oil, flour, and chili powder

  • Optional Toppings:
  • 3 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1 (8 ounce) can tomato sauce
  • 1 cup water
  • ¼ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 3 cups chicken, cooked and chopped (rotisserie works great)
  • 8 (7-inch) whole wheat flour tortillas
  • 1 cup shredded low fat Mexican cheese
  • Avocados, diced
  • Tomatoes, diced
  • Low fat sour cream
  • Cilantro
