Fish Tacos

Preparation Heat grill pan over medium-high heat or heat outdoor grill
- 4 small plum tomoatoes or vine tomatoes, seeded and finely chopped
- 1 large jalapeno (I use 2), seeded and finely chopped
- 1/2 small red onion (I used 1), finely chopped
- A small handful of cilantro leaves, finely chopped
- Salt
- 1 lime
- 2 ears corn on the cob (I used one can)
- 4 pieces of mahi mahi, 6 ounces each
- Vegetable oil, for drizzling
- Salt and Pepper
- 2 teaspoons Old Bay seasoning
- 2 cups shredded Monterey Jack cheese or queso blanco or queso fresco (any easy-melting Mexican cheese)
- 12 6-inch corn or flour tortillas (I use ww tortillas)
Skinny Chicken Enchiladas

In a medium skillet add vegetable oil, flour, and chili powder
- Optional Toppings:
- 3 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 2 tablespoons chili powder
- 1 (8 ounce) can tomato sauce
- 1 cup water
- ¼ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 3 cups chicken, cooked and chopped (rotisserie works great)
- 8 (7-inch) whole wheat flour tortillas
- 1 cup shredded low fat Mexican cheese
- Avocados, diced
- Tomatoes, diced
- Low fat sour cream
- Cilantro
CHIMICHURRI SAUCE

Combine all ingredients in a food processor and pulse chop until all ingredients are approximately 1/8 inch in size
- 8 cloves garlic, minced
- 1 tsp. plus Kosher Salt
- 1 tsp. oregano, dry leaves
- 1 tsp. black pepper, ground
- 1 tsp. red pepper flakes
- Finely grated lemon zest from 3 lemons
- 4 oz. fresh lemon juice
- 1 bunch flat leaf (Italian) parsley
- 1 cup olive oil

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 sticks butter or margarine, softened
- 1/2 cup light brown sugar
