Chicken Salad Pineapple-Pecan

Combine chicken, celery, green onion, green pepper, salt, black pepper, and mayonnaise in a bowl; mix well
- 3 c. chopped cooked chicken breasts
- 1 c. finely chopped celery
- 2 green onions, sliced (about 3 T.)
- 2 T. finely chopped green pepper
- 1 tsp. salt
- Dash of black pepper
- 1/2 c.Low fat mayonnaise
- 1/2 c. chopped pecans
- 1 (20 oz.) can pineapple tidbits, drained
- 2 T. lemon juice

Preheat oven to 425° degrees
- 1/2 cup brown rice flour
- 1/2 cup coconut flour
- 1/2 cup sorghum flour
- 1/2 cup tapioca starch
- 1/2 tsp salt

- 1 (15 ounce) can black beans, drained
- 1 (15 ounce) can garbanzo beans, drained (chick peas)
- 1 ⁄2 cup frozen corn, thawed
- 3 ⁄4 cup sweet red pepper
- 3 ⁄4 cup sweet onion
- 3 ⁄4 cup celery
- 1 ⁄2 cup carrot
- 1 ⁄2 cup salsa, thick and chunky variety
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 2 garlic cloves, grated

- 1 (2 1/2- to 3-pound) boneless pork shoulder
- 1/2 cup honey
- 1/2 cup balsamic vinegar
- 1/4 cup blackberry jam (See Kelly's Notes)
- 1/4 cup hoisin sauce
- 1/2 cup chicken broth
- 3 cloves garlic, minced
- 1/2 cup diced onion
- 1 Tablespoon cornstarch
- 1 recipe Asian Slaw or store-bought coleslaw
