Chicken and White Bean Enchiladas with Creamy Green Chile Sauce

White beans, shredded chicken, green chile, sour cream and cheese
- Chicken and White Bean Filling:
- 1 tsp olive oil
- 1/4 cup minced white onion
- 2 cloves garlic, minced
- 1 can (4.5 oz) chopped green chiles
- 15.5 oz can Navy beans (or Cannellini beans)
- 8 oz cooked shredded chicken breast
- 1/3 can water
- 1 chicken bullion
- 1 tsp cumin
- Green Chile Enchilada Sauce:
- 1 tsp butter
- 1/2 cup chopped white onion
- 2 tbsp flour
- 1 cup fat free chicken broth
- 7 oz can chopped green chile
- 2 jalapeños, chopped (I used jarred)
- salt
- 1/2 cup light sour cream
- 3/4 cup reduced fat Mexican cheese
- 8 medium low carb tortillas
- chopped fresh cilantro or scallions (or both!)
Best Ever Pork and Sauerkraut

I cooked in crockpot. Drained juice from sauerkraut into crockpot
- 2 lb pork lion
- 1 jar sauerkraut (I do not rinse mine)
- 1/2 Tbl caraway seeds *note – you can omit this if you hate caraway seeds but for me it makes the dish
- 1/2 cup chopped yellow onion
- 1 peeled apple (gala or any sweet apple), chopped * (see note)
- 1/4 cup light brown sugar
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 1/2 cup water *optional
- 2 Tbl olive oil

Heat the oil in a wok; add onions, green chilies, cabbage, and sauté until wilted
- 1 tsp Sesame oil
- 2 tbsp Soya Sauce (light)
- 1/2 cup Cabbage (finely chopped)
- 1/4 cup Red Onion (finely chopped)
- 2-3 Green Chilies (cut them into half)
- 1/4 cup Chopped green onions
- 1 cup Frozen mixed peas, beans, corn & carrots

- 1 1/2 cup(s) canned chickpeas, loose skins removed, washed, drained

- 1 15 oz can of pumpkin
- 2 egg whites
- 1 t vanilla
- 1 T pumpkin pie spice
- 1/2 c of raisins
- I also added 1/4 c of water to the above recipe.
- I used 2 T each of raisins, mini choc chips,dried cranberries..instead of just plain raisins.
