Old-Fashioned Beef Stew

1. Place flour, 1/2 tsp salt and 1/4 tsp pepper into zippered bag
- 3/4 tsp coasrse salt, divided
- 1/2 tsp fresh ground pepper, divide
- 1 lb boneless skirt or flank steak, cut into small chunks
- 1/4 cup all-purpose flour
- 3 tsp olive oil, divided
- 1 1/2 cups coarsely chopped red onion
- 8 oz sliced white mushrooms
- 3 cups beef broth
- 4 tsp tomato paste
- 3-4 large thyme sprigs
- 1 large bay leaf
- 1 lb baby white potatoes, unpeeled, cut in quarters
- 8 oz baby carrots
- 4 tsp finely chopped flat leaf parsley
Vitamix: Almond or Cashew Milk

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 3 cups (720 ml) water
- 1 cup (140 g) raw almonds or cashews
- sugar or sweetener, to taste (optional)
Comfort Food Diet Yummy Chocolate Cake

In a large bowl, combine the cake mix, pudding mix, water and egg whites
- FROSTING:
- 1 package (18-1/4 ounces) chocolate cake mix
- 1 package (2.1 ounces) sugar-free instant chocolate pudding mix
- 1-3/4 cups water
- 3 egg whites
- 1-1/4 cups cold fat-free milk
- 1/4 teaspoon almond extract
- 1 package (1.4 ounces) sugar-free instant chocolate pudding mix
- 1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
- Chocolate curls, optional
