RRay's Braised Beef

1. Preheat the oven to 325 degrees F
- Extra-virgin olive oil, for sauteing and drizzling
- 4 onions, very thinly sliced
- 6 cloves garlic, very thinly sliced
- 3 pounds chuck, bottom round or top sirloin steak
- Sea salt and freshly ground black pepper
- 4 to 5 starchy potatoes
- 1 (32-ounce) can Italian tomatoes, sliced or roughly crushed
- 2 tablespoons chopped fresh thyme
- 2 sprigs fresh rosemary, leaves picked and finely chopped
- Parmigiano-Reggiano, for grating
- A few fresh basil leaves, torn
- 1 loaf ciabatta, for serving
Sweet Potatoes Glazed with Molasses, Pecans and Bourbon

Cook's Note: The potatoes can either be roasted or boiled to par-cook them
- 1 stick unsalted butter, quartered
- 3/4 cup molasses
- 1/2 cup light brown sugar
- Pinch cayenne pepper
- 1 cup bourbon
- Salt and freshly ground black pepper
- 8 large sweet potatoes, par cooked and cut into 2-inch dice

- Soup:
- 4 large plum tomatoes
- 1 small white onion or a 1-inch-thick slice of a large white onion, peeled
- 4 garlic cloves, unpeeled
- 1 medium dried New Mexico chile, stemmed, seeded, and torn into large pieces
- 6 cups chicken broth
- 2 corn tortillas, torn into 1-inch pieces
- Salt and freshly ground black pepper
- Tortilla strips:
- 6 corn tortillas, cut into 1/2-inch wide strips
- Vegetable oil, for shallow frying
- 6 to 8 canned chipotle chiles in adobo sauce, optional for garnish
