Claire's Beer Braised Chicken

Preheat the oven to 400 degrees F
- 3 slices thick cut applewood bacon
- 1 whole chicken, quartered
- Kosher salt and freshly cracked black pepper
- 1 fennel bulb, trimmed cored and thinly sliced
- 1 bottle dark beer
- 2 tablespoons apple cider vinegar
Rachael's Orange-Balsamic Glazed Chicken

In a large pan, heat the extra-virgin olive oil over medium-high to high heat
- 2 tablespoons extra-virgin olive oil
- 2 pounds boneless skinless chicken thighs or breasts or any combination of light and dark meat
- Salt and freshly ground black pepper
- 1 teaspoon poultry seasoning
- 2 to 3 sprigs fresh rosemary, leaves chopped
- 1/3 cup orange marmalade
- 1/4 cup balsamic vinegar
- 1/2 cup chicken stock
- 2 scallions, whites and greens, finely chopped
- 4 cups baby arugula
Rachael's Onion Dip

Place a medium skillet over medium to medium high heat and add the extra-virgin olive oil and the butter
- 1 tablespoons extra-virgin olive oil, a turn of the pan
- 1 tablespoon butter
- 2 medium onions, quartered lengthwise then very thinly sliced
- 2 cloves garlic, finely chopped
- 1 cube beef bouillon
- 1/2 cup water
- Black pepper
- 1 teaspoon ground thyme, 1/3 palm full
- 2 teaspoons Worcestershire sauce, eyeball it
- 2 cups sour cream
- 8 ounces cream cheese, softened in microwave for 20 seconds on high
- Pinch salt, optional
- 2 tablespoons chopped chives, 5 to 6 blades
Frosting: Best Chocolate Frosting

In a double boiler over hot water melt chocolate with the butter
- 3 3 3 ounces unsweetened chocolate
- 3 3 3 tablespoons butter
- 3 3 3 cups confectioners' sugar
- 1 1 1 teaspoon vanilla extract
- 3 to 8 3 to 8 8 tablespoons milk
Beef: All Purpose Hamburger Mix

1. Brown the ground meat and drain the grease
- 5 pounds of ground beef or turkey
- 1 tablespoon salt
- 1 cup chopped onions
- 1 cup chopped green peppers
- 1 cup chopped celery
- You may substitute other vegetables to suit your family's taste.
Salad: Go To Salad

Combine the salad ingredients in one bowl
- 1 head butter lettuce,torn
- 2 tablespoon snipped chives
- 1/4 cup buttermilk
- 1 tablespoon white wine vinegar
- 2 tablespoons mayonnaise

In a large punch bowl or pitcher, stir pineapple, lemon juice, cherry juice, rum, and brandy to blend
- 1 can (20-ounce) crushed pineapple in heavy syrup
- 1 cup fresh lemon juice
- 1 cup maraschino cherry juice
- 1 cup dark rum
- 1/2 cup brandy
- 1 bottle (750 ml) chilled inexpensive brut Champagne
Chicken: Tangy Barbecued Oven Roasted Chicken

Preheat the oven to 325 degrees
- 6 to 8 pieces chicken, drumsticks and thighs with skin on
- vegetable oil
- 1/4 cup ketchup
- 1/2 cup chili sauce
- 2 tablespoons lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon dry mustard
- 3 tablespoons brown sugar
- 2 teaspoon onion, minced
- 1/2 bay leaf, crushed
- 1/4 teaspoon crushed thyme
Comfort Food Diet Sweet and Tangy Pot Roast

Cut meat in half and place in a 5-qt
- 1 boneless beef chuck roast (3 pounds)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup water
- 1 cup ketchup
- 1/4 cup red wine or beef broth
- 1 envelope brown gravy mix
- 2 teaspoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/8 teaspoon garlic powder
- 3 tablespoons cornstarch
- 1/4 cup cold water
