Muffins: Spiced Apple Cider Muffins

- 2 tablespoons packed light brown sugar
- 4 teaspoons whole-wheat flour
- 1/2 teaspoon ground cinnamon
- 1 tablespoon butter, cut into small pieces

- 1 cup whole-wheat flour
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 large egg
- 1/3 cup packed light brown sugar
- 1/2 cup apple butter, such as Smucker’s
- 1/3 cup maple syrup
- 1/3 cup apple cider
- 1/3 cup low-fat plain yogurt
- 1/4 cup canola oil
Ina’s BBQ Sauce

Melt the butter in a large heavy-bottomed pot or Dutch oven over medium heat
- 1/4 pound butter
- 3/4 cup minced onion
- 1/2 cup minced garlic
- 2 lemons, zested
- 5 tablespoons freshly squeezed lemon juice
- 4 1/4 cups ketchup
- 1 cup tomato juice
- 3/4 cup light brown sugar
- 6 tablespoons molasses
- 1/2 cup Worcestershire sauce
- 1/2 cup chili powder
- 4 tablespoons white wine vinegar
- 1 1/2 tablespoons chipotle puree
- Pinch kosher salt

Bob's Pressure Cooker Creamy Chicken Curry

1. Add the vegetable oil to the pressure cooker and heat on high or "brown" with the lid off, until sizzling
- 2 tablespoons vegetable oil
- 4 boneless, skinless chicken breasts
- 1/2 cup flour, mixed with 1/2 teaspoon salt, and
- 1/2 teaspoon pepper
- 1 small onion, diced
- 1 teaspoon chicken base mixed into
- 1 cup of water
- 3 teaspoons curry powder
- 1 cup plain yogurt
- 1 tablespoon corn starch
- Additional curry powder to taste

- 3 bay leaves

- 4 cups veal stock
- 2 tablespoons tomato paste
