Canning: Mario's Tomatillo Salsa

Contributed by : Mario Batali This zippy dip adds a kick to meat or fish, and spices up classic tortilla chips
- 1 1/2 pounds Tomatillos (husked and rinsed)
- 3 Garlic cloves
- 1/2 bunch of Cilantro
- 1 Serrano Chili
- 2 Limes (juiced)
- Salt and Pepper to taste

Preheat a griddle over medium heat
- Symon Sauce:
- 2 Lb Ground Beef (75-25 Blend)
- 4 Brioche Rolls (cut into 3rds like a Big Mac)
- 2 tablespoons Butter
- 1 cup Romaine Lettuce (shredded)
- 4 Aged Cheddar Cheese Slices
- Tony Packo Sweet Hot Pickles (a few per burger)
- Pickled Red Onions (a few per burger)
- 1/4 cup Garlic Aoli
- 1/4 cup Ketchup
- 1/4 cup Brown Mustard
- Hot Sauce (to taste)
- Pickle Juice (to taste)
- Garlic Aoli:
- 1 cup Olive Oil
- 2 Cloves Garlic (minced on microplane)
- 2 Egg Yolks
- 1/2 lemon (juiced)
- Salt (to taste)

1. Preheat oven to 350 degrees
- 1 cup (2 sticks) unsalted butter, plus more for pans
- 2 cups all-purpose flour (spooned and leveled), plus more for pans
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups sugar
- 2 large eggs plus 3 large egg yolks
- 2 teaspoons pure vanilla extract
- 1 cup low-fat buttermilk
- Whipped Frosting
- Shaved dark chocolate
David's Three-Cheese Macaroni & Cheese with Country Smoked Bacon

Preheat the oven to 350°F
- 1 (8-oz) package macaroni, cooked al dente, according to package directions
- Salt and ground black pepper, to taste
- 3 tsp butter
- 1 jar (15-16-oz) Alfredo sauce
- 1/3 cup Velveeta cheese
- 1/4 cup mozzarella cheese, grated
- 1 cup + 1/4 cup sharp cheddar cheese, shredded
- 4-6 strips smoked bacon, crumbled
Paula's Barbeque Meatloaf

Preheat oven to 350 degrees F
- 1 1/2 pounds ground beef
- 1 cup fresh bread crumbs
- 1 onion, diced
- 1 egg, lightly beaten
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 2 (8-ounce) cans tomato sauce
- 3 tablespoons vinegar
- 3 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 2 tablespoons Worcestershire sauce
- 1/2 cup water, to thin sauce if necessary

Combine and mix all ingredients except the sour cream in a bowl, then top it off with the sour cream
- 3 cups baby spinach
- 1/2 cup corn (frozen/defrosted or canned)
- 1/2 cup black beans
- 1/4 cup red onions, sliced into half moons
- 1/4 avocado, cut cross wise into thin slices
- 1/2 cup salsa
- 1 tbsp low-fat sour cream

Bring a large pot of salted water to a boil
- 1 pound rotini pasta (3/4 of a 16-ounce box)
- 1/2 cup evaporated milk
- 1/4 cup extra-virgin olive oil
- 1 cup crumbled feta cheese or queso blanco
- 1/2 cup fresh cilantro leaves
- 1 lime, juiced
- Salt and freshly ground black pepper
- 1 cup finely diced ham
- 1 orange bell pepper, seeded, ribbed, and chopped
- 1 red bell pepper, seeded, ribbed, and chopped
- 1 cup frozen peas
- 1/2 small red onion, thinly sliced
- 1/2 cup peeled and chopped jicama
- 1/2 cup pimento stuffed olives
