In a food processor fitted with the steel blade, combine the flour, sugar, baking powder, salt, and baking soda
- 2 3/4 cups all-purpose flour
- 1 1/2 tablespoons sugar
- 1 tablespoon plus 1 teaspoon baking powder
- 2 teaspoons salt
- 1/4 teaspoon baking soda
- 10 tablespoons (5 ounces) chilled unsalted butter, cut into small pieces
- 1/4 cup minced onion
- 1 tablespoon chopped fresh or 2 teaspoons dried thyme
- 1 cup buttermilk
- 1 or 2 tablespoons milk or cream
- 1/4 cup grated Parmesan cheese, optional

- 5 large russet potatoes, about 2 pounds
