Drain pineapple, reserve juice
- 1 can (20 oz) crushed pineapple
- 2 cans (8 oz each) pineapple juice
- 2 pkg (3 oz each) or 1 pkg (6 oz) cherry jello
- 1/2 tsp ground nutmeg
- 1 c frozen dark sweet cherries, thawed, quartered and drained
- 1/2 c chopped pecans
Cowboy Casserole

In a large skillet, cook beef over medium heat until no longer pink
- 1/2 pound lean ground beef (90% lean)
- 1 can (8-3/4 ounces) whole kernel corn, drained
- 2/3 cup condensed cream of chicken soup, undiluted
- 1/2 cup shredded cheddar cheese, divided
- 1/3 cup 2% milk
- 2 tablespoons sour cream
- 3/4 teaspoon onion powder
- 1/4 teaspoon pepper
- 2 cups frozen Tater Tots

Peel strips from cucumbers to create decorative edges if desired; cut into 1/2-in
- 2 large cucumbers
- 16 cherry tomatoes
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup finely chopped sweet red pepper
- 2 tablespoons finely chopped celery
- 2 tablespoons finely chopped green onion
- 1 tablespoon finely chopped carrot
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
Slow Cooker Sweet Hot Nuts

Place nuts in slow cooker
- 1 c whole cashews
- 1 c whole toasted almonds
- 1 c pecan halves
- 1 c hazelnuts, toasted and skins removed
- 1/2 c sugar
- 1/3 c melted butter
- 1 tsp ground ginger
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp cayenne pepper

Christmas Trifle

- 1 can (8 oz) crushed pineapple
- 3 medium firm bananas, sliced
- 1 jar (10 oz) red maraschino cherries
- 1 jar (6 oz) green maraschino cherries
- 3 1/2 cups eggnog, chilled
- 2 pkgs (3.4 oz each) instant vanilla pudding mix
- 1 prepared angel food cake (8"), cut into 1" cubes
- 1 carton (16 oz) Cool Whip, thawed
- 1/4 cup chopped walnuts

1. Cake: Sift together flour, baking powder and salt
- Icing:
- 2 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup shortening
- 1 1/2 cups sugar
- 2 eggs , well beaten
- 1 teaspoon vanilla
- 1 cup milk
- 2 egg whites
- 1 1/4 cups sugar
- 1/3 cup water
- 3 tablespoons corn syrup

1. Cream shortening and butter
- Glaze:
- 1/2 cup Crisco
- 1 1/4 cups sugar
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1/2 cup raisins
- 1/2 cup butter
- 2 eggs
- 2 cups flour
- 1 grated orange peel
- 1/4 cup walnuts, chopped
- 1/2 cup fresh orange juice
- 3 tablespoons powdered sugar
Chicken Fried Steak (Healthy Makeover)

Using a meat mallet or rolling pin, pound each beef cutlet to 1/4" thickness
- 4 (4 oz each) beef round cube steaks
- 1 tsp garlic salt
- 1 c flour
- 1 c buttermilk
- 1/4 c canola oil
- 3/4 c beef broth
- 3/4 c milk
- 1/4 tsp salt
- 1/4 tsp pepper

In a large saucepan, combine the first five ingredients
- 1 package (16 ounces) frozen unsweetened strawberries, thawed
- 1 package (12 ounces) fresh or frozen cranberries
- 1 cup sugar
- 1/2 cup water
- 4 teaspoons grated orange peel
- 1 package (8 ounces) reduced-fat cream cheese
- 1/4 cup packed light brown sugar
- 1/2 teaspoon vanilla extract
- 1 carton (8 ounces) frozen whipped topping, thawed
- 2 loaves (10-3/4 ounces each) frozen reduced-fat pound cake, thawed and cubed
