Overnight Cinnamon Roll Tres Leches Cake

This is a very good and fairly easy Pillsbury Recipe
- 1 can (17.5 ounce) Pillsbury Grands refrigerated cinnamon rolls
- 3/4 cup canned sweetened condensed milk (not evaporated)
- 3/4 cup evaporated milk
- 1/2 cup whole milk
- 1 1/2 cups heavy whipping cream
- 1 teaspoon vanilla
- 1/8 teaspoon ground cinnamon
- Fresh sliced strawberries (optional)
Pressure Cooker Irish Stew

I had some frozen pork tenderloin tips I needed to use
- 2 pounds pork loin, cubed
- 1/4 cup extra virgin olive oil
- 1 10 1/4 ounce can tomato soup
- 1 14 ounce can chicken broth or water
- 4 carrots, coarsely chopped
- 4-5 medium red potatoes, cut into chunks
- 4 stalks celery, coarsely chopped
- 1 large onion, coarsely chopped
- 1/3 cup fresh parsley, finely chopped
- 12 ounces of beer or ale
- 2 bay leaves
- salt and pepper to taste

- 12 large garlic cloves, minced
- 6 tsp dried thyme leaves
- 6 tsp dried marjoram leaves
- 6 tsp salt
- 6 tsp pepper

Chicken Breast a la Rose

Adapted from an old recipe of my mother
- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil (divided in half)
- 2 tablespoons of butter (divided in half)
- 2 onions, thinly sliced
- 2 garlic cloves, minced
- 1 tablespoon flour
- 2 teaspoons Dijon mustard
- 1/2 cup rose wine
- 1 cup chicken stock
- 2 sprigs thyme, leaves picked (optional)
- 1 teaspoon honey
Sea Scallops with Mushrooms and Sherry

This is adapted from an epicurious
- 20 large sea scallops (1 1/2 pounds), tough ligament removed if attached
- 1/8 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoon olive oil
- 1/2 stick (1/4 cup) unsalted butter
- 1 pound cremini mushrooms, quartered
- 1/3 cup finely chopped shallots
- 2 garlic cloves, finely chopped
- 2/3 cup medium-dry sherry
- 1 tablespoon balsamic vinegar
- 1 tablespoon soy sauce

This recipe was given to me in the 1980's
- 1 pound of bacon, sausage or diced kielbasa, cooked or browned
- 8 slices of stale bread
- 4 tablespoons butter, softened
- 8 large eggs
- 2 cups 2% milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups shredded Cheddar cheese
- 1/2 cup green pepper, diced
- 1/2 cup onion, diced
Lettuce Wedge With Bleu Cheese Dressing

This was adapted from a copycat recipe from Lone Star Steakhouse
- Dressing
- 3/4 cup mayonnaise
- 1/2 cup buttermilk
- 1/4 cup crumbled bleu cheese
- 1/2 teaspoon sugar
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon salt
- Salad and Toppings
- 1 head of iceberg lettuce
- 1/4 cup crumbled bleu cheese, divided (approx. 1 to 1-1/2 tablespoons per salad)
- 6 sliced cherry or grape tomatoes, per salad
- 3 slices cooked bacon, crumbled per salad
- 1 small red onion, thinly sliced, divided per salad
Pico De Gallo in A Ninja Chopper

Place all the ingredients in the order listed into a Ninja chopper and use short pulses until chopped
- 1/4 cup red onion, cut into quarters
- 1/4 cup packed fresh cilantro, stems removed
- 1 small jalepeno pepper, seeded, cut into quarters
- 3 roma or plum tomatoes, seeded, cut into quarters
- 1 teaspoon freshly squeezed lime juice or to taste
- kosher salt and pepper to taste
Asian Salad Dressing and Marinade

This is a marinade I use for Smoked Sausage Kebobs
- 1/3 cup honey
- 1/4 cup spicy brown mustard
- 2 tablespoons canola oil
- 1 tablespoon soy sauce
- 2 garlic cloves, minced
- 1/2 teaspoon minced fresh ginger root or 1/4 teaspoon ground ginger
Smoked Boneless Leg of Lamb

Remove the lamb from the packaging and the netting and unroll
- 3 1/2 to 4 pound boneless leg of lamb
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoons dried oregano
- 3 tablespoons fresh lemon juice
- 4 to 5 cloves fresh garlic,minced
- 1 tablespoons course sea or kosher Salt
- 1 tablespoon Course Ground Black Pepper

- 1 cup red wine vinegar
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1 teaspoon dried rosemary
