Italian Seasoning

In the middle of preparing dinner, I realized I was out of Italian Seasoning
- 3 tablespoons dried basil
- 3 tablespoons dried oregano
- 3 tablespoons dried parsley
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Thousand Island Dressing

- 1/2 clove garlic, minced
- 1/4 teaspoon kosher salt plus more to taste
- 3/4 cup prepared or homemade mayonnaise
- 1/4 cup bottled chili sauce
- 2 tablespoons ketchup
- 1 1/2 tablespoons minced onion
- 2 teaspoons sweet pickle relish
- 1/2 hard-cooked large egg, pushed through a sieve or finely chopped
- Freshly ground black pepper
Kathy's Rib Rub

This a combination of various rub recipes and the one we like best, so far
- 2 tablespoon paprika
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1/2 teaspoon cayenne pepper
- 1 teaspoon ground white pepper
- 1 teaspoon ground black pepper
- 1 1/2 teaspoon dried oregano
- 1 tablespoons kosher salt
- 1 1/2 tablespoon brown sugar, packed
- 2 teaspoons cocoa powder
- 1 tablespoon granulated garlic
- 1 tablespoon granulated onion or 2 teaspoons onion powder
- 1 teaspoon black pepper
Steak & Ale's Burgundy Mushrooms

I received this recipe, in the early 80's, from a cook at the now defunct restaurant
- 1 1/4 pounds button mushrooms
- 2 quarts water
- 1/4 cup lemon juice
- 4 tablespoons butter
- 3/4 cup yellow onions, diced
- 1/2 cup Pinot Noir
- 1 tablespoon beef bouillon granules
- 1/4 teaspoon garlic powder
- 1/3 teaspoon ground white pepper
Seafood Newburg Casserole

In a large bowl, combine shrimp, crabmeat and sherry; mix gently to coat
- 1 1/2 pounds shelled deveined uncooked medium shrimp, tails removed
- 1/2 pound fresh uncooked crabmeat or 2 (6-oz.) cans crabmeat, drained
- 1/4 cup dry sherry
- 3/4 cup uncooked regular long-grain white rice
- 1 1/2 cups water (for rice)
- 8 tablespoons butter (divided into 2 and 6 tablespoons)
- 1 shallot, minced
- 8 ounces (3 cups) sliced fresh mushrooms
- 1 tablespoon lemon juice
- 1/2 cup all purpose or unbleached flour
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon ground nutmeg
- 1 pint (2 cups) half-and-half
- 1/2 cup milk
- Topping
- 1/4 cup margarine or butter, melted
- 1 cup Panko Bread Crumbs (I use Kikkoman)
- 1 teaspoon Italian Seasoning
Smoked Boneless Leg of Lamb

Remove the lamb from the packaging and the netting and unroll
- 3 1/2 to 4 pound boneless leg of lamb
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoons dried oregano
- 3 tablespoons fresh lemon juice
- 4 to 5 cloves fresh garlic,minced
- 1 tablespoons course sea or kosher Salt
- 1 tablespoon Course Ground Black Pepper
- [water pan mixture]
- 1 cup red wine vinegar
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 2 garlic cloves, minced
- water to make 3 cups
Baked Crab Rangoon

This uses low-calorie ingredients
- 1 can (6 oz.) white crabmeat, drained, flaked 4 oz.
- (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
- 2 green onions, thinly sliced
- 1/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
- 12 won ton wrappers
Kathy's Beef Pie

Another one of Marty's favorites! This is fairly easy to prepare, once you get the hang of the brown sauce
- Brown Sauce:
- 1 9 inch deep dish pie crust
- 2 tablespoons butter
- 3 tablespoons flour
- 1 cup beef broth or stock
- 1/4 teaspoon tabasco sauce
- Filling:
- 1 pound ground round, drained
- 1 medium onion, diced
- 1/4 cup med or dry red wine
- 1 16 ounce can mixed vegetables, drained (I use canned Veg-All)
- 1/2 teaspoon salt
- Topping:
- 1 cup grated cheddar cheese
- 1 egg
- 1 tablespoon 2% milk
Parmesan Roasted Cauliflower

- 1 head cauliflower, cut into florets and sliced 1/4th inch thick
- 1 medium onion, sliced
- 8 sprigs thyme
- 4 garlic cloves, unpeeled
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 1/2 cup grated Parmesan cheese
