Tex Mex Brunch Cups

Heat oven to 350 degrees. Place eggs in a saucepan and cover with cold water
- 6 eggs
- 2.52 ounce package Oscar Meyer Fully Cooked Bacon
- 1/4 cup butter
- 1/4 cup all purpose flour
- 2 cups 2 percent milk
- 3 1/2 cups shredded Pepper Jack cheese, divided into 2 cups, 1/2 cup and 1 cup
- 1/2 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 can (16.3 oz) Pillsbury Grands Southern Homestyle Buttermilk Biscuits
Mustard-and-Lemon-Glazed Pork with Roasted Vegetables

In a small bowl, whisk the Dijon and whole-grain mustards with the grated lemon zest, thyme and butter
- 1/4 cup Dijon mustard
- 1/4 cup whole-grain mustard
- Finely grated zest of 1 lemon
- 1 tablespoon chopped thyme
- 1 tablespoon unsalted butter, softened
- One 3-pound boneless pork loin roast, trimmed of all fat
- Salt and freshly ground pepper
- 1 pound baby carrots, peeled
- 16 large shallots, peeled
- 1/2 cup dry white wine
- 12 garlic cloves, unpeeled
- 1/4 teaspoon crushed red pepper
- 1 1/4 cups chicken stock or low-sodium broth
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon sherry vinegar
Grapes Stuffed with Blue Cheese

- 2 (3 ounce) packages cream cheese, softened
- 1/3 cup crumbled blue cheese
- 1/3 cup finely chopped walnuts (toasted is better)

Slow Cooker Ravioli Lasagna

Heat a large skillet over medium-high heat
- 2 pounds ground round, drained
- 3 medium to large garlic cloves, minced
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian Seasoning
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 (24 ounce) jars prepared pasta sauce (I use Classico Traditional Sweet Basil)
- 1 (25 ounce) package frozen cheese ravioli
- 2 1/4 cups shredded part skim mozzarella cheese, divided into 1 cup and 1 1/4 cups
- 2/3 cups part skim Ricotta cheese
- 1/3 cup fresh grated Parmesan
Beef Stew

Preheat oven to 325 degrees Heat oil over medium high heat in a large dutch oven
- 2 pounds cubed beef chuck stew meat
- 1/4 cup flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1/4 cup vegetable oil
- 1 medium onion, minced
- 2 carrots, minced
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 6 cups beef broth or stock
- 1 cup dry red wine (I use Cabernet Sauvignon)
- 1 tablespoon dried parsley or 4 fresh sprigs
- 1 pinch thyme or 4 fresh sprigs
- 1 bay leaf
- 8 medium carrots, chopped in 2 inch pieces (about 3 cups)
- 2 celery stalks, cut in 2 inch pieces
- 4 medium red or yellow potatoes, cut into 2 inch pieces
- 12 ounces frozen pearl onions, thawed (optional)
Chili con Carne

This is an easy Chili Con Carne recipe
- If using the Brooks beans add the following:
- 2 lbs lean ground beef
- 1 cup chopped onion
- 1/4 cup diced green pepper
- 2 large garlic cloves, minced
- 2 16 oz cans diced tomatoes
- 1 15 oz can tomato sauce
- 1 teaspoon salt
- 2 14 ounce cans dark red kidney beans (Bush's is good)
- 3 cups water
- 1 teaspoon red pepper flakes
- 1 teaspoon dried oregano, crushed
- 3/4 teaspoon corriander
- 1 teaspoon ground cumin
- 1/2 ounce of a good semi sweet chocolate
- 1 1/2 teaspoon Chili powder or to taste
- 1/2 teaspoon ancho chili pepper
- 2 15 ounce cans Brooks Chili Beans in Chili Sauce. Hot or mild
- Chili powder to taste - at least 1 1/2 teaspoon.
- Ancho chili pepper to taste.
- Omit the rest of the spices.
- 1 ounce of a good semi sweet chocolate

I came up with this recipe by combining the ingredients I love for spaghetti and meat sauce plus an ingedient that ...
- 8 ounces angel hair pasta
- 1/2 pound sweet italian sausage, crumbled
- 2 pounds ground round
- 1 medium onion, diced
- 1 medium green bell pepper, diced
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoons olive oil
- 1/2 cup red wine ( I use Valpolicella)
- 1 16 ounce can tomato sauce
- 1 14 ounce can condensed cream of celery soup
- 8 ounces shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Baked Beans

Everyone loves these and they are easy to make!
- 3 16 ounce cans pork and beans in tomato sauce, lightly drained
- 1/2 cup ketchup
- 2 medium onions, chopped
- 1/2 tablespoon prepared horseradish
- 1 tablespoon yellow mustard
- 2 teaspoons worcestershire sauce
- 1/4 cup dark molasses
- 1/4 cup light brown sugar, packed
- 4 slices bacon, partially cooked
Boneless Braised Short Ribs

You can braise the meat a day or two ahead of time and then warm it up right before you serve it
- 6 to 8 pieces boneless beef short Ribs
- 1/4 C. Canola Oil
- 3 T Sweet Butter
- 2 Lg. Carrots- 1 “ chunks
- 3 Ribs Celery- 1 “ chunks
- 1 Lg. Onion- 1 “ chunks
- 2 Cloves Garlic- lightly smashed
- 2 Sprigs Fresh Thyme
- 1 Bayleaf
- 2 C. Red Wine (I prefer a flavorful Chianti, you do not want to use a wine that you would not want to drink, the better the wine the better the flavor)
- 1 Qt. Rich Beef Stock
- Kosher Salt and Fresh Ground Pepper
Honey Basil Grilled Pork Tenderloin
