Pork Medallions in Wine Buttermilk Sauce with Marsala Mushrooms

I had a pork tenderloin and some buttermilk I needed to use
- 1/4 cup flour, seasoned with salt and pepper (reserve extra)
- 3 tablespoons flour unseasoned
- 12 ounces babybella mushrooms sliced
- 3 medium shallots, minced
- 1/4 cup marsala wine
- 5 tablespoon butter, divided into 1 tablespoon, 1 tablespoon and 3 tablespoons
- 2 tablespoons olive oil
- 1 cup of chicken broth or stock
- 1/2 cup white wine (I use Chardonnay)
- 1/2 cup buttermilk
- 1 teaspoon dried thyme
- 2 to 3 pounds pork tenderloin

- 1 tablespoon extra-virgin olive oil, more for baking dish
- 1/3 cup thinly sliced scallions (1 bunch, 6 to 7)
- 1 pound sweet Italian sausage, casings removed
- 2 teaspoons finely chopped fresh sage
- 8 large eggs
- 1 1/2 cups 2% milk
- 2 1/2 cups heavy cream
- 4 ounces chunk Gruyère, 2 cups grated, divided into 1/ 1/2 cup + 1/2 cup for topping
- 1 1/4 teaspoons kosher salt
- 1 teaspoon black pepper
Seasoned Oyster Crackers

These are great for just about anything, salads, soups, snacking, in meat loaf, etc
- 2 (12 ounce) packages oyster crackers
- 1 cup vegetable oil
- 1 1/2 tablespoons dry Ranch-style dressing mix
- 1 teaspoon lemon pepper
- 1 teaspoon dried dill weed
- 1/2 teaspoon garlic salt
Blue Cheese and Bacon Broccoli Salad

In a large bowl combine the broccoli, onion, blue cheese, and bacon
- 1 large bunch broccoli, separated into florettes (about 5 cups)
- 1 medium red onion, chopped
- 1 (4-ounce) container crumbled blue cheese
- 5 slices crispy cooked bacon, crumbled
- 1 cup light mayonnaise (I use Hellmann's)
- 2 tablespoons cider vinegar
- 1 tablespoon sugar
- Salt and black pepper
Slowcooker Chinese Barbeque Country Ribs

This recipe was adapted from a oven recipe
- 2 med. clove garlic, minced
- 1 envelope Lipton onion-mushroom recipe soup mix
- 2 cups tomato puree
- 2/3 cups brown sugar, packed
- 1/3 cup soy sauce
- 1/3 cup white vinegar
- 1/3 cup chili sauce
- 4 1/2 to 5 1/2 pounds country-style ribs
Bleu Cheese Dressing

This was adapted from a copycat recipe from Lone Star Steakhouse
- 3/4 cup mayonnaise
- 1/2 cup buttermilk
- 1/4 cup crumbled bleu cheese
- 1/2 teaspoon sugar
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon salt
- 1 tablespoon blue cheese
Seafood Newburg Casserole

I combined several recipes to come up with the flavor
- 1 1/2 pounds shelled deveined uncooked medium shrimp, tails removed
- 1/2 pound fresh uncooked crabmeat or 2 (6-oz.) cans crabmeat, drained
- 1/4 cup dry sherry
- 3/4 cup uncooked regular long-grain white rice
- 1 1/2 cups water (for rice)
- 8 tablespoons butter (divided into 2 and 6 tablespoons)
- 1 shallot, minced
- 8 ounces (3 cups) sliced fresh mushrooms
- 1 tablespoon lemon juice
- 1/2 cup all purpose or unbleached flour
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon ground nutmeg
- 1 pint (2 cups) half-and-half
- 1/2 cup 2% milk
- Topping
- 1/4 cup margarine or butter, melted
- 1 cup Panko Bread Crumbs (I use Kikkoman)
- 1 teaspoon Italian Seasoning
Easy AuGratin Potatoes

Kids love these! I eliminated almost 1/4th cup of butter to reduce calories
- 2 pound package frozen Southern-style hash browns, thawed
- 10 ounce can cream of celery soup
- 3 cups grated sharp cheddar cheese, packed
- 8 ounce container sour cream
- 1 cup chopped onion
- 1/4 teaspoon pepper
- 1 1/2 cups lightly crushed cornflakes cereal
- 2 tablespoons butter
Roasted Pork Loin with Orange-Herb Sauce

- 3 tablespoons extra-virgin olive oil
- 2 garlic cloves, coarsely chopped
- One 1 1/2-pound boneless pork loin
- Salt and freshly ground pepper
- 1 cup fresh orange juice
- 1/2 cup chicken stock
- 1/2 cup dry white wine
- 5 black peppercorns
- 1 rosemary sprig
