  • THAI BROCCOLI SALAD (posted by Atty)
  • 1/4 cp creamy or chunky peanut butter
  • *2 TBL equal "spoonful" - or sugar sub
  • 1 /2 TBL hot water
  • 1 TBL lime juice
  • 1 TBL light soy sauce
  • 1 TBL dark sesame oil
  • 1/4 tsp red pepper flakes
  • 2 TBL veg oil
  • 3 cps fresh broccoli florets
  • 1/2 cp sliced green onions
  • 1/2 cp chopped red bell pepper (or your choice)
  • 1 clove garlic, crushed
  • *May subs. 3 pkts equal
  • Combine peanut butter, equal, hot water, lime juice, soy sauce, sesame oil and red pepper flakes until well blended, set aside
  • Heat veg. oil in large skillet over med-high heat. Add broccoli, pepper, onions and garlic. Stir-fry 3 -4 min. until vegetables are tender-crisp. Remove from heat and stir in peanut butter mixture.
  • Serve warm or at room temp.

  • Flakey cheddar cheese biscuits that are truly scrumptious.
  • Ingredients1/2 cup sharp cheddar cheese
  • 2 cups low carb baking mix
  • 2 oz salted butter
  • 1/4 cup whipped whipping cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup water
  • Directions1.Pre-heat oven to 425° F (210° C).
  • 2 .Cut cold butter into low carb baking mix (like Carbquick) with pastry cutter until mixture resembles coarse meal.
  • 3 .Add shredded cheese, salt, garlic and onion powder. Blend well.
  • 4 .Mix whipping cream and water to equal 1/2 cup liquid and add to dry mix. Stir until dough forms. Do not overwork.
  • 5 .Drop dough onto greased cookie sheet (approximately 1.5 ounces raw dough).
  • 6 .Bake in hot oven approximately 8 minutes until golden

  • I've been making these and we like them a lot.
  • 1 cup Bob's Red Mill almond flour
  • 1 cup natural peanut butter
  • 1 egg
  • 3 T Truvia
  • 1/2 tsp baking soda
  • 1 tsp minced orange peel ( Penzeys)
  • Mix together, roll into balls and press with a fork ,bake at 325 for 10 minutes, check for browning. Makes 20 or so.
  • I have a Breville counter top oven, gets a bit hot in there.
  • These cookies are great when cooled, and crisp the next day.

  • Ingredients [ View Metric ] 32 ounce Velveeta, Light cut into chunks
  • 8 tablespoon Butter
  • 2 cups Heavy whipping cream
  • 2 cups Whole milk
  • 1 teaspoon Salt & pepper to taste
  • 36 ounces Elbow Macaroni, dry
  • 3 cups Cheddar cheese shredded
  • 2 teaspoon Paprika

  • 1 . Pour milk and cream into pot. Add the chunked Velveeta and cook over low heat, stirring until Velveeta has melted. Add 1 stick of butter and melt into cheese sauce. Add salt & pepper to taste.
  • 2 . Cook elbow macaroni noodles according to pkg directions. Drain.
  • 3 . Place cooked elbow macaroni in turkey-sized roasting pan(if making the full recipe) and pour cheese over. Mix well. Top with 3 cups of shredded cheddar cheese. Sprinkle top with paprika.
  • 4 . Bake at 350 until bubbly, about one hour.
  • One serving: 1/2 cup. The original recipe makes approximately 24 servings

  • 1 1/4 1 1/4 1/4 cup crushed almonds or almond flour
  • 2 2 2 tablespoon melted butter
  • 1 1 1 egg white
  • 1/4 1/4 1/4 cup granulated splenda
  • 10 350 and press into sprayed pie pan (I used a springform pan with a silicone circle for easy removal) Bake 10 minutes at 350 degrees
  • Chocolate layer
  • Pour over bottom of baked crust, put in freezer while assembling the filling
  • Filling
  • 12 12 1/2 oz cream cheese (1 1/2 packages of cream cheese) room temperature
  • 1/2 1/2 1/2 tablespoon lemon juice
  • 1 1 1 tablespoon melted butter
  • 3/4 3/4 3/4 cup granulated splenda
  • Blend with blender till smooth
  • 1 1 1 cup heavy whipping cream whipped till stiff
  • 3rds Drop in by 3rds stirring on lowest speed till incorporated into cream cheese
  • Take pie out of freezer and pour in filling
  • 4 up the remaining 4 candy bars and crushed walnuts and sprinkle on top.
  • Chill well before serving
  • Top with sugar free caramel and sugar free whipped topping before serving.

  • Julie I don't have a recipe per se, I just wing it. Here's what I do.
  • 1 tsp Ginger, fresh grated
  • 1 clove garlic, grated
  • 2 Green Onions, sliced thinly
  • 1 Baby Carrot, grated
  • 1/2c Low Sodium Soy Sauce, naturally brewed
  • 1 Tbsp Dry Sherry
  • 1 tsp Oyster Sauce
  • 2 Minced Dried Thai Chilis or Thai Chili Flakes or 1 Tbsp Sambal Oelek
  • or 1 Fresh Serrano Chili, minced
  • Fiberfit to desired sweetness
  • 2 - 3 Tbsp Water or Chicken Broth
  • 1 tsp Sesame Oil
  • Mix together and store in frig or freeze

  • to love the following recipe that I got off of Lowcarb luxury. It is for scalloped cauliflower. I have taken it to family get togethers and they always want the recipe. The recipe calls for frozen, but I have made with fresh cauliflower.
  • Scalloped Cauliflower
  • 2 bags frozen cauliflower
  • 1/2 small white onion, finely chopped
  • 12 oz bag finely shredded cheddar cheese (sharp, if you like)
  • 1/2 pint whipping cream
  • salt and white pepper
  • 1/4 cup butter (1/2 stick)
  • crumbled cooked bacon (optional)
  • to 350°F. to 350°F.
  • to frozen cauliflower bags one at a time into a collander and run cool water over each to separate the pieces and slightly thaw, but don't use warm water.
  • 45 10 minutes. 10 min before completion, add crumbled bacon if you opt to. Bubbly and delicious — this will cure your craving for scalloped potatoes!
  • 10 4 Servings. 4 net grams of carbohydrate per serving

  • ■12 ounces, fluid Thin Noodles, Cooked And Drained
  • ■¼ cups Soy Sauce
  • ■2 Tablespoons Sugar
  • ■4 cloves Garlic, Minced
  • ■2 Tablespoons Rice Vinegar
  • ■3 Tablespoons Pure Sesame Oil
  • ■½ teaspoons Hot Chili Oil
  • ■4 Tablespoons Canola Oil
  • ■2 Tablespoons Hot Water
  • ■4 whole Green Onions, Sliced Thin
  • Preparation Instructions
  • Whisk all ingredients (except noodles and green onions) together in a bowl. Taste and adjust ingredients as needed.
  • Pour sauce over warm noodles and toss to coat.
  • Sprinkle with green onions and toss.
  • Serve in a bowl with chopsticks. Yummy!
