Coconut Flour Doughnuts

- Coconut Flour Doughnuts
- 1/2 1/2 cup of coconut flour
- 1/4 1/4 teaspoon of sea salt
- 1/4 1/4 teaspoon of baking soda (omit)
- * (1/4 tsp nutmeg)
- 6 1/2 eggs (3 eggs + 1/2 cup s/f apple sauce)
- 1/2 1 2 of honey (or other sweetener) (1/2 sugar + 1 or 2 tbsp water)
- 1 1 tablespoon of vanilla
- 1/2 1/2 cup of unsalted butter (coconut butter, coconut oil, or regular oil will work as well)
- to are really good and are AWESOME with a cup of coffee!!! I suggest people run to their kitchens and try these!!! LOL

Almond Flour Fudge Cake

- 4 4 4 cups almond flour – scooped –16 ounces
- 2 2 2 cups Splenda (liquid equivalent or granular)
- 1/2 1/2 1/2 cup Erythritol – granular
- 4 4 4 packets Stevia Plus
- 1/2 1/2 1/2 cup cocoa - I like the Hershey's Special Dark
- 2 2 2 teaspoons baking powder
- 2 2 2 teaspoons baking soda
- 1/2-teaspoon 1/2-teaspoon salt
- 1 1 1 tablespoons vanilla
- 1/3-cup 1/3-cup oil
- 4 4 4 eggs
- 1-cup 1-cup sour cream
- Frosting:
- 1/2-cup 1/2-cup 1 – 1 stick – room temp
- 1 1 1 large egg – room temp
- 1/3 1/3 1/3 cup granular Erythritol – powdered – I use my coffee bean grinder
- 1/3 1/3 1/3 cup Splenda
- 2 2 2 packets Stevia Plus
- 8 8 8 ounces cream cheese – room temp
- 1 1 1 teaspoons vanilla
- to 350° 9x13-inch 350° Spray a 9x13-inch cake pan with cooking spray.
- In a large bowl combine dry ingredients and stir well.
- to from the oven to a wire rack and cool completely.
- Make Frosting:
- Beat butter with electric mixer until light and fluffy. Add sweeteners and beat well scraping sides of bowl as needed.
- Add the egg and beat until very fluffy…beat in vanilla.
- Add softened cream cheese a little bit at a time beating until fluffy after each addition.
- Frost cake...store in frig.
Tangerine Chicken or Scallops

- This is also wonderful with scallops instead of the chicken. If using scallops, cut them into quarters.

- ¼ cup chicken stock
- 1 T dry sherry
- 1 T soy sauce
- 1 tsp sesame oil
- ¼ tsp Chinese Chili Sauce
- 2 tsp Splenda
- 1 T grated orange or tangerine zest
- ½ T salt
- 1 pound boneless skinless chicken breasts, thinly sliced.
- 2 tsp minced fresh ginger
- 1 tsp minced garlic
- 1 large red pepper, cut into ½ inch cubes
- 2 1 white and green parts cut into 1 inch lengths
- 1 2 cornstarch mixed with 2 T water
- 3 T peanut oil

- 1 1 1 small onion, chopped
- 1 1/2 1 1/2 1/2 cups shredded Cheddar cheese
- 1 1 ounce) can 1 (12 ounce) can sliced mushrooms
- 1 1 ounce) can 1 (6 ounce) can sliced black olives
