  • Coconut Flour Doughnuts
  • 1/2 1/2 cup of coconut flour
  • 1/4 1/4 teaspoon of sea salt
  • 1/4 1/4 teaspoon of baking soda (omit)
  • * (1/4 tsp nutmeg)
  • 6 1/2 eggs (3 eggs + 1/2 cup s/f apple sauce)
  • 1/2 1 2 of honey (or other sweetener) (1/2 sugar + 1 or 2 tbsp water)
  • 1 1 tablespoon of vanilla
  • 1/2 1/2 cup of unsalted butter (coconut butter, coconut oil, or regular oil will work as well)
  • to are really good and are AWESOME with a cup of coffee!!! I suggest people run to their kitchens and try these!!! LOL

  • 4 4 4 cups almond flour – scooped –16 ounces
  • 2 2 2 cups Splenda (liquid equivalent or granular)
  • 1/2 1/2 1/2 cup Erythritol – granular
  • 4 4 4 packets Stevia Plus
  • 1/2 1/2 1/2 cup cocoa - I like the Hershey's Special Dark
  • 2 2 2 teaspoons baking powder
  • 2 2 2 teaspoons baking soda
  • 1/2-teaspoon 1/2-teaspoon salt
  • 1 1 1 tablespoons vanilla
  • 1/3-cup 1/3-cup oil
  • 4 4 4 eggs
  • 1-cup 1-cup sour cream
  • Frosting:
  • 1/2-cup 1/2-cup 1 – 1 stick – room temp
  • 1 1 1 large egg – room temp
  • 1/3 1/3 1/3 cup granular Erythritol – powdered – I use my coffee bean grinder
  • 1/3 1/3 1/3 cup Splenda
  • 2 2 2 packets Stevia Plus
  • 8 8 8 ounces cream cheese – room temp
  • 1 1 1 teaspoons vanilla
  • to 350° 9x13-inch 350° Spray a 9x13-inch cake pan with cooking spray.
  • In a large bowl combine dry ingredients and stir well.
  • to from the oven to a wire rack and cool completely.
  • Make Frosting:
  • Beat butter with electric mixer until light and fluffy. Add sweeteners and beat well scraping sides of bowl as needed.
  • Add the egg and beat until very fluffy…beat in vanilla.
  • Add softened cream cheese a little bit at a time beating until fluffy after each addition.
  • Frost cake...store in frig.

  • This is also wonderful with scallops instead of the chicken. If using scallops, cut them into quarters.

  • 1 T grated orange or tangerine zest

  • 1 pound boneless skinless chicken breasts, thinly sliced.
  • 2 tsp minced fresh ginger
  • 1 tsp minced garlic
  • 1 large red pepper, cut into ½ inch cubes
  • 2 1 white and green parts cut into 1 inch lengths
  • 1 2 cornstarch mixed with 2 T water
  • 3 T peanut oil
