Captin Carl's World Famous Riverboat Jambalaya

1 batch feeds about 10 people
- 4 boneless chicken breasts
- 3 lbs smoked sausage
- 4 cans chicken broth (1 large & 1 small)
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 3 medium onions
- 1 stalk of celery
- 2 tbls of kitchen bouquet
- 2 tbls of minced garlic
- 2 tsp of Zatarains Crab Boil concentrate
- 2 lbs of Uncle Ben's converted original rice
- Enough Olive oil to coat the bottom of both pans
- Optional: 2 cans of original rotel
Vanilla Beer Cake

Preheat oven to 350, grease and flour 10" bundt pan
- 1-18 1/2 oz pkg yellow cake mix
- 1-3 1/2 oz pkg instant vanilla pudding
- 1 cup beer
- 1/4 cup vegetable oil
- 4 eggs
Beef Stuffed Cabbage

Wrap cabbage leaves in plastic wrap or moist paper towels and microwave on HIGH for 2 minutes, until soft
- 1/3 head(s) savoy cabbage, about 8 whole leaves

- 1/2 tsp table salt

This recipe's Ingredients were scaled to yield a new amount
- 4-3/4 pounds ground beef
- 3 egg
- 3 onion, chopped
- 3 cups and 2 tablespoons milk
- 3 cups and 2 tablespoons dried bread crumbs
- salt and pepper to taste
- 1/3 cup and 1 tablespoon brown sugar
- 1/3 cup and 1 tablespoon prepared mustard
- 1 cup and 1 tablespoon ketchup
Mexican Pizzas

In large skillet, add peanut oil to 1/4 ince depth
- 8 candys flour tortillas
- 2 cups old el paso thick n chunky salsa
- 1 lb ground beef
- 1 envelope (1 3/4 oz) old el paso taco seasoning mix
- 1 can 16 oz old el paso refried beans
- 4 cups shredded montery jack cheese
- sliced ripe olives
- sliced green onions

- 4 medium scallion(s), green and white parts, divided and chopped
- 1 medium jalapeٌo pepper(s), seeded and minced
- 1 Tbsp ginger root, minced
- 6 oz lean beef round, or sirloin, trimmed of fat and diced
- 7 cup(s) fat-free beef broth
- 2 Tbsp low-sodium soy sauce
- 2 Tbsp cilantro, chopped
- 1 tsp hot pepper sauce, or to taste
- 1/2 cup(s) frozen green peas, baby size
