Homemade Marshmallows

- 3 packages unflavored gelatin
- 1 1/2 c granulated sugar
- 1 c light corn syrup
- 1/4 tea kosher salt
- 1 tabl pure vanilla extract
- confectioners' sugar, for dusting

- 1 egg and 1 egg white
- 1 c packed light-brown sugar
- 4 T butter, melted
- 1 t pure vanilla extract
- 1/2 c quick coking oats (not instant)
- 1/2 c cherries
- 1/4 c chopped walnuts
Chocolate Pudding

In a medium saucepan, combine sugar, cornstarch, cocoa and salt
- 3/4 c sugar
- 1/4 c cornstarch
- 1 T unsweetened cocoa powder
- 1/8 t salt
- 1 1/2 c whole milk
- 1 c heavy whipping cream
- 4 egg yolks
- 8 (1 oz) squares semi-sweet chocolate, chopped
- 1 T butter
- 1 t vanilla extract
