Blueberry Muffins (Gluten Free)

1. Preheat oven to 40F. 2
- 1 c sweet sorghum flour
- 1/2 c millet flour
- 1/2 c tapioca or potato starch
- 1 c sugar (or sub - I used 1/2 c applesauce, 1/4 c maple syrup and 1/4 c sugar, but I would have liked a tad sweeter. Next time will try 1/2 c applesauce and 1/2 c sugar)
- 2 t baking powder
- 1/4 t baking soda
- 1/8 t salt (more if using dairy free "butter")
- 1 t guar or xantham gum
- 1 c blueberries
- 1 c milk
- 8 T butter, at room temp (b/c of the applesauce next time will try 4 T butter)
- 2 eggs
- 1 t vanilla extract
- turbinado sugar for sprinkling
The Chewy Gluten Free

Preheat the oven to 375 degrees F
- 8 ounces unsalted butter
- 11 ounces brown rice flour, approximately 2 cups
- 1 1/4 ounces cornstarch, approximately 1/4 cup
- 1/2-ounce tapioca flour, approximately 2 tablespoons
- 1 teaspoon xanthan gum
- 1 teaspoon kosher salt
- 1 teaspoon baking soda
- 2 ounces sugar, approximately 1/4 cup
- 10 ounces light brown sugar, approximately 1 1/4 cups
- 1 whole egg
- 1 egg yolk
- 2 tablespoons whole milk
- 1 1/2 teaspoons vanilla extract
- 12 ounces semisweet chocolate chips
Potato Chip Fried Chicken

Dip chicken in egg mixture and then roll in potato chip pieces until well coated
- Chicken w/bone or w/o
- 12 oz bag Lay's classic potato chips crushed
- 2 eggs (whipped)

Steamed Spring Rolls

In a steamer pot, steam the cabbage leaves until they can fold easily (about 5-10 min)
- Spring Rolls
- 12-15 cabbage leaves
- 2 T duck fat
- 1/2 lb pork, diced
- 2 t coconut aminos
- 3 carrots, julienned
- 3 celery stalks, julienned
- 1/2 c mushrooms, sliced
- Dipping Sauce
- 1/4 c coconut aminos
- 1/8 c toasted sesame oil
- 1 clove minced garlic
- 1/2 t ginger root, minced
- salt and pepper to taste
French Chicken in a Pot with Drunken Jus

Serve w/mashed potatoes and green beans/steamed carrots
- 1 (4-pound) whole chicken
- Kosher salt and freshly ground black pepper
- 1 tablespoon extra-virgin olive oil
- 1 medium onion, chopped
- 1 rib celery and green tops, chopped
- 1 small carrot, peeled and chopped
- 1 head garlic, cloves peeled and sliced
- 2 small sprigs fresh rosemary
- 1 large fresh bay leaf
- 1/3 bottle dry white wine (about 1 cup)
- Juice of 1 lemon

- Topping:
- 4 slices white sandwich bread, torn into 1/4s
- 2 tabl unsalted butter melted
- process in food processor until coarsely ground
- Mac-n-cheese:
- 1 lb elbow macaroni
- 6 tabl unsalted butter
- 1 tea garlic minced or pressed through a garlic press
- 1 tea dry mustard
- 1/4 tea cayenne pepper
- 6 T all-purpose flour
- 1 3/4 c low-sodium chicken broth
- 3 1/2 c whole milk
- 16 oz colby cheese, shredded
- 8 oz extra sharp cheddar cheese, shredded
Green Chutney (haree chutney)

Green Chutney is made by nearly every family in northern India, where it is served with just about every meal
- 1 c chopped fresh cilantro
- 1 c chopped fresh mint leaves
- 1 green mango, peeled, fruit sliced away from the pit and roughly chopped
- 2-3 jalapenos (cored and seeded if you prefer a milder flavor) roughly chopped
- a 2in piece fresh ginger, peeled and cut into chunks
- 1/2 red onion, quartered
- juice of 1 lemon
- 1 tabl sugar
- 1 tea kosher salt
Almond Balls

This healthy snack is simple to make (no baking!), and it's vegan and wheat free
- 16 ounces almond butter
- a half cup pure maple syrup
- one and one half cups granola (I use maple-almond granola, but other flavors may work well too)
Super Yummy Vegan Ginger Cookies

These delicious treats contain flax seed, making them a nutritious snack
- 2 cups wheat flour (buckwheat flour works really well too)
- 2 teaspoons baking soda (I use the kind with out aluminum)
- 1/2 teaspoon sea salt
- 1 teaspoon organic cinnamon
- 2 teaspoon freshly grated ginger
- 1/2 teaspoon of ginger powder
- 1/2 teaspoon cloves)
- 3/4 cup organic coconut oil
- 1 cup raw turbando sugar
- 1/4 cup of Flax goo ( 2 tablespoons of milled flax with 1/4 cup boiling water allow to sit for 10 minutes)
- 1/4 cup molasses
- 2 tablespoons apple sauce
- a small bowl of turbando sugar for dipping
Easy Bean Dip

Combine all ingredients in a food processor or blender and process until smooth
- 1 15-ounce can black beans, drained and rinsed
- 1 cup salsa
- 1/2 teaspoon ground cumin (optional)
