Zucchini, tomato and feta cheese side dish
- 1 1/2 lbs. small fresh zucchini, sliced crosswise
- 3 tbl. extra-virgin olive oil, separated
- 1 tbl. chopped garlic
- 2 tsp. chopped dill or 1/2 tsp. dried dill
- salt and freshly ground pepper
- 6 oz. herb-flavored feta cheese, crumbled
- 6 plum tomatoes, peeled, halved lengthwise

- mixed salad greens
- choice of tomato, cucumber, green pepper, onion, nuts, fruit slices, cheese, etc.
- choice of medium rare steak, broiled chicken breast, cooked shrimp, etc.
- Balsamic viniagrette dressing

Swedish Meatballs

Combine the meatball ingredients and form into 1" balls
- Meatballs:
- 1 1/2 lbs. ground beef
- 1 small onion chopped
- 1 tblsp. chili powder
- 1 c. crushed Ritz crackers
- 2 eggs, beaten
- salt, pepper, garlic salt to taste
- olive oil
- Sauce:
- 1 large can tomato sauce
- 1/2 tomato sauce can of water
- 1 tsp. chili powder
- 1 tblsp. margarine
- salt, pepper, garlic salt to taste

- 2 firm ripe bananas

- Dressing:
- 3 tbl. lime juice
- 1/2 tbl. brown sugar
- 1 tsp. ground ginger
- 1 tsp. Thai fish sauce
- 1 tsp. chile paste with garlic
- Steak:
- 1/2 lb. flank steak
- 1 tsp. cracked black pepper
- Salad:
- mixed salad greens
- 1/3 c. thinly sliced red cabbage
- 1/3 c. fresh basil, chopped
- 1/4 c. fresh cilantro, chopped
- 1/4 c. thin julienne-cut carrot
- 1 tbl. finely chopped dry roasted peanuts
No-Bake Eskimo Cookies

- 3/4 c butter (for dairy-free, use Earth Balance soy-based substitute)
- 3/4 c sugar (if using Truvia, 1/2 c)
- 3 Tbsp. unsweetened cocoa powder
- 1/2 tsp. vanilla
- 1 Tbsp. water
- 2 c. rolled oats
- 1/3 c. confectioners sugar for decoation
