- 3/4 c. low-fat mayonnaise
- 1 1/2 T. minced jalapenos
- 1-2 lb. peeled eggplant, sliced 3/8" thick
- 1/2 c. fine dry breadcrumbs
- 1/2 c. grated fresh Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. fresh ground black pepper
- 1/2 tsp. garlic powder
- 1/4 tsp. onion powder
- cooking spray
- 1/2 c. sour cream
Asian Sticky Sauce

This makes a tasty teriyaki-type sauce to coat cooked chicken and other meat for an Asian flavor
- 1 Tbsp. water
- 1 Tbsp. low sodium soy sauce
- 1 Tbsp. honey (or maple syrup or sorghum syrup)
- 1 Tbsp. sherry
- 1 tsp. fresh grated ginger or 1/2 tsp. ground ginger
- 1/2 tsp. five-spice powder
Stuffed Tomatoes

Cut the tomatoes in half horizontally
- 2 large beefsteak tomatoes
- 1/2 c. chopped cooked chicken
- 1/2 c. shredded mozzarella cheese
- 1/4 c. chopped fresh flat-leaf parsley
- 1/4 c. Italian bread crumbs
- pepper to taste
- olive oil
Bacon-wrapped Potato Bites

Preheat oven to 400 degrees F
- 7 slices of bacon, cut in thirds horizontally
- 5 small red potatoes, cut into quarters
- 1 tablespoon extra virgin olive oil
- 1 tablespoon fresh thyme or 1 tsp. dried thyme
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground pepper
- 1 teaspoon crushed red pepper
Stir Fry Sauce

Prepare the sauce by whisking together the first 6 ingredients
- 1/4 c. chicken broth
- 2 tsp. cornstarch
- 3 tbl. soy sauce
- 1 tbl. hoisin sauce
- 2 tsp. light brown sugar

- assortment of meats and/or vegetables, thinly sliced

Dense spice cake from World War I
- Liquid Mixture:
- 2 c. sugar
- 2 c. water
- 1/2 tsp. ground cloves
- 1 c. raisins (floured)
- 3/4 c. shortening
- 1/2 tsp. nutmeg
- 1 tsp. allspice
- 1 tsp. cinnamon
- 1 1/2 tsp. salt
- Dry Mixture:
- 3 1/2 c. sifted flour
- 1 tsp. baking soda
- 2 tsp. baking powder
Gluten-free, Dairy-free Sugar Cookies

In a large bowl, cream the sugar and butter stick at medium speed
- 1 cup sugar
- 1 Earth Balance vegan Buttery stick (1/2 cup), softened
- 1 large egg
- 1 tablespoon water
- 1 1/2 teaspoons vanilla
- 1/4 teaspoon salt
- 1/2 teaspoon xanthan gum (omit if your all-purpose flour has it)
- 2 cups gluten-free all-purpose flour + more for rolling/dusting (I used King Arthur flour)
- Colored sugar for decorating.
Greek Salad

Place the cucumber, peppers, tomatoes and red onion in a large bowl
- 1 hothouse cucumber, unpeeled, seeded, and sliced 1/4-inch thick
- 1 red bell pepper, large-diced
- 1 yellow bell pepper, large-diced
- 1 pint cherry or grape tomatoes, halved
- 1/2 red onion, sliced in half-rounds
- 1/2 pound feta cheese, 1/2-inch diced (not crumbled)
- 1/2 cup calamata olives, pitted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/4 cup good red wine vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup good olive oil
