Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped
- 2 c. packed fresh basil leaves
- 2 cloves garlic, peeled
- 1/4 c. pine nuts
- 2/3 c. extra virgin olive oil
- salt, pepper
- 1/2 c. grated parmesan or pecorino cheese
Salsa

Fresh tomato salsa
- 2 cans tomatoes (diced or whole)
- 1 can tomato sauce
- 1 small onion, chopped
- 5-6 jalapeno peppers, chopped
- 3 cloves garlic, chopped
- 1/2 small can black olives, chopped
- 1/2 c. white vinegar
- black pepper
- 1/2 c. chopped cilantro (don't skimp)
Shrimp Dip

Shrimp Dip
- 2 8 oz. blocks reduced-fat cream cheese, softened
- juice of 1 lemon
- 1 small grated onion
- 1/2 c. Heinz chili sauce
- dash Tabasco
- 1 tbl. worcestershire sauce
- 1 tsp. salt
- 1 lb. cooked shrimp, cut into chunks
Tomato-Garlic-Herb Sauce with Pasta or Spaghetti Squash

Cook pasta according to package directions; place in a serving bowl and keep warm
- 8 oz. uncooked thin spaghetti or 1 medium spaghetti squash
- 5 garlic cloves, minced
- 2 Tbsp. olive oil
- 2 lb. plum tomatoes, cut into eighths
- 3 Tbsp. minced fresh parsley
- 3 Tbsp. thinly sliced or chopped fresh basil
- 1 tsp. salt
- 1/4 tsp. freshly ground pepper
- Freshly grated Parmesan cheese
Rosemary-Mustard Pork Tenderloin with Peaches

Preheat grill to high. Pat the pork dry and season with salt and pepper
- 2 1-lb. pork tenderloins
- salt and freshly ground pepper
- vegetable oil for the grill
- 3 firm-ripe peaches, halved, pitted and cut into wedges
- 1/2 c. dry white wine
- 1/3 c. packed light brown sugar
- 1 lemon
- 2 tsp. whole-grain mustard
- 1/4 tsp. chopped fresh rosemary, plus 1 or 2 small sprigs
Vegetable Pizza

Combine olive oil and garlic and brush onto pizza
- 3 Tbsp. olive oil
- 1 prepared pizza crust, e.g. Boboli
- 2 tsp. minced garlic
- 1 8 oz. pkg. shredded 4-cheese blend
- 1 6 oz. jar marinated artichoke hearts, drained and halved
- 2-3 baby portobello mushrooms, sliced
- 1 small red onion, cut into 1-inch wedges
- 12 red bell pepper strips
- 12 black olives, pitted and halved
- 1 tsp. fresh chopped herbs to taste
Blueberry and Strawberry Pie

Raw berries mixed with melted fruit spread in a pre-baked pie shell
- 1 c. blueberry fruit spread
- 1/4 tsp. ground cinnamon
- 1 1/2 pints fresh blueberries
- 1 1/2 tsp. grated lemon zest
- 1 9-inch pre-baked @48779 shell
- 1/4 c. strawberry fruit spread
- 6 to 8 large strawberries, hulled and cut vertically into 1/4 inch slices
Mixed Fruit Crumble

Mixed Fruit Crumble
- Fruit:
- 12 oz. mixed fruit, either raw or frozen (frozen berries work great)
- 1/8 c. sugar
- 2 tsp. cornstarch
- Topping:
- 1 1/2 c. flour
- 1/2 c. sugar
- 1/4 c. brown sugar
- 1/2 tsp. salt
- 1 c. oats
- 1/2 lb. butter or margarine, cold and diced
Basic Fish Tacos Recipe

Place the fish in a baking dish and squeeze a lime half over it
- 1 pound firm white fish, such as tilapia, snapper, cod, mahi mahi, or catfish
- 2 limes, halved
- 1 garlic clove, minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 2 tablespoons vegetable oil, plus more for oiling the grill grates
- Kosher salt
- Freshly ground black pepper
- 1/2 small head of green or red cabbage (about 14 ounces), cored and thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup cilantro, coarsely chopped
