Holiday Sweet Potatoes

With the addition of good bourbon, this casserole rocks!
- 6 large sweet potatoes, baked, peeled and mashed or 2 large cans of sweet potatoes or yams, drained
- 3 eggs
- 1 1/4 c. milk
- 1/4 c. good bourbon (we use Maker's Mark)
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. allspice
- 2 tsp. vanilla
- mini-marshmallows
Dill Dip

Combine all ingredients. Chill thoroughly
- 1 c. mayonnaise
- 1 c. sour cream
- 1 Tbsp. dried dill weed
- 1 Tbsp. dried parsley
Greek Caponata (Oven Roasted Vegetables)

Oven Roasted Vegetables
- 1 14.5 oz. can diced tomatoes with juice
- 2 zucchini, cut into 1 inch rounds
- 2 summer squash, cut into 1 inch rounds
- 2 tomatoes, cut into wedges
- 1 large Japanese eggplant, cut into 1 inch rounds
- 1 red onion, peeled & cut into 1 inch rounds
- 1 potato, peeled and cut into 1 inch cubes
- 3 garlic cloves, minced
- 1/4 c. extra-virgin olive oil
- 1 1/2 tsp. salt
- 1 tsp. freshly ground black pepper
- 1 tsp. dried oregano
- 4-6 slices toasted sourdough bread (optional)

- 2 halibut filets, skin removed
- 1 Tbsp. olive oil, divided
- 1/2 Tbsp. lemon juice
- Sea salt and freshly cracked pepper to taste
- 1/2 c. plain panko crumbs
- 1/4 c. grated fresh parmesan cheese
- 1 Tbsp. chopped parsley
- 1/4 - 1/2 tsp. garlic powder

- Garnish:
- 4 c. torn romaine
- 1/2 lb. ground beef
- 1/2 small onion
- 2 garlic cloves, chopped
- 1/2 env. Taco seasoning
- 1/2 c. water
- 1/2 can tomato paste
- 1/2 c. Pace mild salsa
- sprinkle of lime juice
- Tortilla chips
- Any of all of the following: chopped tomatoes, chopped cilantro, grated cheddar cheese, sour cream, guacamole

Cheese and Fruit Platter
- 8 oz. each of a variety of three cheeses with different flavors and textures, such as Gorgozola, cheddar and brie or camembert.
- 1 large crisp red apple, sliced
- 1 medium pear, sliced
- 1 pint strawberries, sliced in half if large
- clusters of seedless red and green grapes
- 1 7 oz. package dried apricots
- 1/4 c. dried cherries or cranberries
Mandarin Chicken Wild Rice

Mandarin Chicken Wild Rice Skillet Dish
- 1 tbl. margarine
- 1/3 c. sliced green onions
- 1 tsp. chopped garlic
- 3 c. cooked wild rice
- 1 1/2 c. chopped cooked chicken breast
- 1 1/2 c. fresh spinach, cut into pieces
- 1 11 oz. can mandarin orange segments, drained (reserve 3 tbl. juice)
- 1/4 c. sliced almonds
Puttanesca

Pasta with a homemade tomato-garlic-olive-caper-anchovy sauce
- 1/2 cup extra virgin olive oil
- 1 (2-ounce) can anchovy fillets, undrained, or 2 Tbsp. anchovy paste
- 4 cloves garlic, crushed or minced
- 1 (28-ounce) can diced tomatoes
- 1 (2 1/2-ounce) jar or 1/4 cup capers, drained
- 1/2 cup black or kalamata olives, coarsely chopped
- Freshly cracked black pepper to taste
- 1/2 pound pasta such as penne, ziti, broken lasagna, etc.
