Shrimp and Pesto Pizza

Spread the pizza crust evenly with the pesto
- 1 12" prepared pizza crust (like Boboli)
- 1/3 c. prepared pesto
- 2 c. shredded mozzarella or multi-cheese blend
- 6-8 oz. cooked shrimp, shelled, cut into large pieces
- 1/2 c. coarsely chopped softened sun-dried tomatoes
- 1/4 c. minced green onions
- 1/4 tsp. crushed red pepper flakes
Emeril's Coffee

- 2 oz. Kahlua
- 1 tbl. cocoa powder
- 1 oz. Amaretto
- 6 oz. hot brewed coffee

- Topping:
- 1 c. all purpose flour
- 1/2 c. firmly packed brown sugar
- 3/4 stick (6 Tbsp.) unsalted butter, softened
- 3/4 tsp. cinnamon

- 1 stick (1/2 c.) unsalted butter, softened
- 2/3 c. granulated sugar
- 2 large eggs
- 1 c. all purpose flour
- 3/4 tsp. baking powder
- 1/2 tsp. salt
- thinly sliced apples, peaches, etc., or blueberries, raspberries, etc.(optional):
Apple Pie

In a large bowl, thoroughly combine apples, sugar, flour, cinnamon and nutmeg

- 3/4 c. sugar
- 2 Tblsp. flour
- 1 tsp. cinnamon

- 1 unbaked vinegar pastry pie shell
- 2 eggs
- 1 16 oz. can Libby's pumpkin
- 3/4 c. sugar
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. cloves
- 1 12 oz. can evaporated milk
Vinegar Pie Crust

- 1 tsp. sugar
- 1 c. flour
- 1/2 tsp. salt
- 1/3 c. shortening
- 3-4 tbl. cold water
- 1 tsp. white vinegar

- 3 cloves minced garlic
- 1/4 c. olive oil
- 4 large tomatoes, chopped
- salt and pepper to taste
- 1/2 c. torn basil
- 1/4 c. minced oregano
- 2 tbls. minced rosemary
- 1 tsp. red pepper flakes
Cheddar Bay Biscuits

Penne with Fresh Tomato-Arugula Sauce

- 12 oz. whole-wheat penne pasta
- 1 lb. diced tomatoes (about 2 cups)
- 3 c. arugula, cut into strips
- 1/2 c. fresh basil, cut into strips
- 2 tbl. olive oil
- 1 tbl. balsamic vinegar
- 1/2 tsp. minced garlic
- 1/2 tsp salt
- 1 c. fresh Parmesan, shaved
