- 8 oz. linguine
- 4 tbl. olive oil
- 4 tbl. butter
- 6 cloves garlic, minced
- 1/2 tsp. dried oregano
- 1/2 c. chopped fresh Italian parsley
- 1/4 c. chopped fresh basil
- Sprinkle of dried red pepper flakes
- 3 cans chopped clams, drained
- 2 tbl. grated fresh Parmesan cheese

- 1 clove garlic, minced
- 1/2 c. sliced jarred roasted red peppers

- 1/2 c. thinly sliced portabello mushrooms
- 1/2 c. thinly sliced cucumber
- 1/4 c. crumbled reduced fat feta cheese
- 2 Tbsp. chopped pitted Kalamata olives
- 1/2 tsp. dried oregano
- 2 c. loosely packed mixed baby salad greens

- 1 15-oz. can tomato sauce

- 1 medium to large eggplant
- olive oil
- 1/2 lb. ground lamb
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 1 tbl. chopped garlic
- 1 tomato, chopped
- 1/3 c. Italian dry bread crumbs
- 1/4 c. chopped fresh parsley
- garlic salt, pepper, cumin, cajun spice to taste
- Parmesan cheese, grated (fresh is best)
