Easy Chicken Pot Pie

- 2 teaspoons olive or vegetable oil
- 1 cup chopped onion
- 4 boneless chicken breast halves cut into 1 to 2-inch cubes, about 4 cups
- 2 tablespoons all-purpose flour
- Pinch dried thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon paprika
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 medium red potatoes, cut into 1-inch cubes
- 1 (14 1/2-ounce) can crushed tomatoes
- 1 cup reduced-sodium chicken broth
- 1/4 cup dry white wine
- 1 teaspoon Dijon mustard
- 1/2 cup frozen corn kernels
- 1 (9-inch) refrigerated pie crust
- 1 egg, lightly beaten

- 10 Tbsp unsalted butter, room temperature
- 3/4 c light brown sugar, packed
- 2 1/2 c flour

Directions Preheat the oven to 350 degrees F
- Crust:
- 1 1/2 cups graham cracker crumbs (10 crackers)
- 1/4 cup sugar
- 6 tablespoons (3/4 stick) unsalted butter, melted
- For the filling:
- 6 extra-large egg yolks, at room temperature
- 1/4 cup sugar
- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons grated lime zest
- 3/4 cup freshly squeezed lime juice (4 to 5 limes)
- For the decoration:
- 1 cup (1/2 pint) cold heavy cream
- 1/4 cup sugar

- 1/4 cup milk
- 1 cup diced ham
- 1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
- 1 cup grated Swiss or cheddar cheese
Black and White Bean Chili

Heat oil in Dutch oven or large saucepan over medium-high heat until hot
- • 2 tablespoons oil (I use bacon fat!)
- • 1 cup onions, chopped
- • 1 clove of garlic, minced
- • 114 - 113cup flour
- • 2 teaspoons chili powder (I use more)
- • 1 1/2 teaspoon ground cumin (I use more)
- • 2 cups milk
- • (9 ounce) package frozen white com (calls for two bags but I used one 12 oz bag)
- • 1 (15.5 ounce) can northern beans, drained and rinsed
- • 1 {15 ounce) can black beans, drained and rinsed
- • 1 (14.5 ounce) can chicken broth
- • 2 cups chicken breasts, cooked and cubed (boil until falling apart. Use excess chicken broth in soup)
- • 1 (4 ounce) can rotel tomatoes
- • 1/4 cup fresh cilantro, chopped (Optional)
- • 6 sprigs of fresh cilantro, for garnish (Optional)
