- 2 large eggs, room temperature
- 2 tablespoons red food coloring
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
- 1 pound cream cheese, softened
- 2 sticks butter, softened
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners' sugar
- Chopped pecans and fresh raspberries or strawberries, for garnish
Chocolate Peanut Butter Cake Roll

Heat oven to 350°F. Spray 15 x 10 x 1-inch pan with cooking spray
- Cake:
- 1 box Betty Crocker® SuperMoist® milk chocolate cake mix
- 1/2 cup water
- 1/4 cup canola oil
- 6 eggs
- 2 tablespoons powdered sugar
- Filling:
- 1 cup crunchy peanut butter
- 1 cup butter, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla
- 2 tablespoons whipping cream
- 1/2 to 3/4 cup chopped miniature chocolate-covered peanut butter cup candies, unwrapped
- Ganache:
- 2 cups milk chocolate chips
- 1 cup whipping cream
