Easy Garlic Chicken

- 4 boneless skinless chicken breasts
- 4 garlic cloves , minced
- 4 tablespoons brown sugar
- 3 teaspoons olive oil
Creamy Vegetable Chowder

Melt the butter in a large soup pot
- 2 Tablespoons butter
- 1/2 cup chopped onion
- 1 cup finely chopped carrot
- 1 celery stick, finely chopped (feel free to add more celery if you like celery; I don't, so I don't add much)
- 1 Tablespoon minced garlic
- 4 cups chicken broth (I usually use a mixture of low-sodium chicken broth and broth made with chicken soup base because it gives it such nice flavor)
- 2 large baking potatoes, peeled and chopped
- 1 Tablespoon flour
- 1/2 cup water
- 2/3 cup milk
- 2 cups chopped broccoli
- 2 heaping cups shredded cheddar cheese
Greek Style Garlic Chicken

So yummy. I served this over a greek salad
- 4 skinless, boneless chicken breast halves
- 1 cup extra virgin olive oil
- 1 lemon, juiced
- 2 teaspoons crushed garlic
- 1 teaspoon salt
- 1 1/2 teaspoons black pepper
- 1/3 teaspoon paprika
Quick Ham Casserole

Butter shallow 1 1/2-quart baking dish
- 2 T butter or margarine, melted.
- 1/8 t and 1/4 t onion powder
- 2 C Corn Flakes crushed to 1 C
- 1 can (11 oz.) condened Cheddar cheese soup. undiluted
- 1 C milk
- 1/8 t. garlic powder
- 1 C cooked diced ham (I used 2 or more cups)
- 1 can (4 oz) sliced mushrooms, drained (Les likes more)
- 6 oz. (4 cups raw) noodles cooked and drained.

- 1 chopped medium onion
- 4 carrots, thinly sliced
- 3 celery stalks, thinly sliced
- 1 tablespoon dried thyme leaves
- Coarse salt and ground pepper

- 1 bag (16 ounces) green split peas, picked over and rinsed
- Ham bone plus 2 cups reserved ham
- 2 tablespoons butter
- 4 slices whole-wheat sandwich bread, crusts removed, cut into 1/4-inch cubes

Beef Tenderloin with Shallot Sauce

From 'Christmas with Southern Living 2005' This might be our new traditional Christmas dinner! Loved It!
- 1 lb shallots, peeled and halved lengthwise
- 2 Tbls olive oil
- 3/4 tsp salt
- 1/2 tsp peper
- 1 Tbls salt
- 1 1/2 tsp onion powder (I used dried onion flakes bc I couldn't find my onion powder)
- 1 1/2 tsp chopped fresh thyme or 1/2 tsp dried
- 1 (8 lb) beef tenderloin, should yield about 6lbs trimmed
- 1/4 c olive oil
- 3 c beef broth
- 1 cup dry marsala wine (I used a red wine- legaris ribera del duero 2006 from sam's, it was great)
- 2 Tbls all purpose flour
- 3 Tbls water
- 3 Tbls butter
- 1/4 tsp pepper
- Garnish: fresh thyme

- Crust:
- 1/2 c soft butter
- 1/2 c soft margarine (i use butter for both)
- 2 c flour
- 1 1/2 c powdered sugar
- dash of salt
- Filling:
- 2 c sugar
- 1/2 c flour
- 1/2 c lemon juice
- 4 beaten eggs

Divide turkey into 4 equal sized rounds
- 1 1/4 pounds lean ground turkey breast
- 1/2 cup chopped roasted red peppers, divided
- 1/2 cup shredded part-skim mozzarella cheese, divided
- 1/4 teaspoons salt
- Freshly ground black pepper
Jalapeno Popper Dip

Preheat oven to 350. Combine all of the ingredients into a medium bowl
- Topping:
- 6-8 slices of bacon, diced and cooked crispy
- 2 8-oz packages of cream cheese, soft
- 1 cup of mayonnaise
- 4-6 jalapeno's, chopped and deseeded. The seeds will make it fiery hot.
- 1 cup of cheddar cheese, shredded
- 1/2 cup of mozzarella cheese, shredded
- 1/4 cup diced green onion
- 1 cup of crushed crackers ( I used Ritz)
- 1/2 cup parmesan cheese
- 1/2 stick of butter, melted
