Two-Ingredient Creamy Broccoli

1.Cook the broccoli however you like
- 3 1/2 cups of fresh broccoli
- 1/2 cup creamy garlic hummus
- add lemon juice or black pepper to suit your taste
Skinny Baked Potato Soup 5 WW Points

Servings: 5 • Size: 1 cup • Old Points: 4 pts • Points+: 5 pts Calories: 207
- 2 russet potatoes, washed and dried
- 1 small head of cauliflower, stem removed cut into florets
- 1 1/2 cups fat free chicken broth
- 1 1/2 cups 1% reduced-fat milk
- salt and freshly cracked black pepper
- 1/2 cup light sour cream
- 10 tbsp reduced-fat shredded sharp cheddar cheese
- 6 tbsp chopped chives, divided
- 3 slices bacon, cooked and crumbled (you can use turkey bacon if you prefer)
Antipasta Kabobs

Made these for Memorial weekend 2013
- 1 9 oz package of Three Cheese Tortellini ,(I used Buitoni )cooked to package directions
- 1 can Medium or Large pitted Black Olives
- 1 5.75 oz jar Green Olives
- 2 12 oz containers of marinated mozzarella balls(usually found near the speciality cheeses)
- 30 slices of Salami, cut in half
- 60 pieces of pepperoni
- 1 cup Balsamic Vinaigrette Salad Dressing (store bought or homemade), I used Paul Newmans( he and my Dad used to race cars together)
- 60 Skewers How ever many you want to make. I had to cut mine in half

- 12 ounces baby spinach, arugula, field greens
- 1 small bunch cilantro, washed and dried, leaves removed whole from stems
- 2 medium avocados, peeled and halved
- 3/4 cup dried cranberries
- 3/4 cup Candied Spiced Almonds--see recipe
- Sweet white balsamic vinaigrette recipe--see recipe
BLT Chopped Salad

- 2 cups butter lettuce, chopped
- 2 cups fresh arugula, chopped
- 1 pint grape tomatos, quartered
- 4 slices thick-cut bacon, fried and crumbled
- 1 cup sweet corn
- 1 avocado, chopped
- 4 ounces feta, crumbled
- 1 1/2 tablespoons olive oil
- 1 lime, juiced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

- 1 can sweetened condensed milk
- 1 tsp coarse salt

Apple Cinnamon Breakfast Quinoa

1. In a small saucepan bring quinoa, milk, and water to a boil
- 1/4 C dry quinoa
- 1/4 C cow/soy/almond milk (I used vanilla soy mil)
- 1/4 C water
- 1/4 t cinnamon
- 1 packet of stevia
- 2 T raisins
- 1 T chia seeds
- 1 medium apple, finely chopped
Chicken Parm Meatballs

- 1 1/4 pounds ground chicken
- 1/2 cup breadcrumbs
- 2 tablespoons chopped onion
- 1 tablespoon chopped parsley
- 1/2 cup Pecorino (or Parm)
- salt to taste
- pepper to taste
- 1 clove garlic, minced
- 1 teaspoon fennel seeds
- 1 egg, whisked
- zest of half a lemon
- 3 tablespoons olive oil
- 1 14-ounce can storebought pizza sauce (such as Don Pepino’s)
- 4 ounces fresh mozzarella
