Skillet Honey Lime Tilapia

- Fish and Marinade:
- 4 tilapia fillets (4-5 oz each)
- zest of 1 lime,
- plus 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 1/2 tablespoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 clove garlic, minced
- Dredging and Cooking:
- 1/2 cup all-purpose or whole wheat flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1-2 tablespoons olive oil lime wedges for serving
Dr. Pepper Pot Roast in Crock Pot

Made this with an English Roast for Sunday dinner
- Roast
- 1 can Campbell’s cream of mushroom soup
- 2 cans Campbell’s cream of potato soup
- 2 cups Dr. Pepper
- 1 package Lipton onion soup mix
- 1/2 – 1 tsp. Tony’s Creole Seasoning (depending on how spicy you want it, I actually didn't see this the first time, so I left it out)

- 1 1/4 C water
- 3/4 t table salt, divided
- 1/2 C uncooked pearl barley
- 1 1/2 t extra-virgin olive oil, divided
- 1 1/2 C grape tomatoes, halved
- 1 1/2 t minced garlic
- 1/4 t. freshly ground black pepper
- 3 C baby arugula leaves
- 1/4 t finely grated lemon zest (or to taste)
Carrot-Banana Muffins

These muffins are a great cross between carrot cake and banana bread and have a nice, subtle sweetness
- 2 cups almond flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 cup unsweetened coconut, shredded
- 3 large eggs
- 3 bananas, mashed
- 1/2 cup (8 tablespoons) unsalted butter, cubed and softened
- 2 tablespoons raw honey
- 1 teaspoon apple cider vinegar
- 1 1/4 cup dates, pitted and chopped
- 2 medium carrots, shredded
- 3/4 cup walnuts, chopped

- 1 lb ground turkey breast
- 1 large onion (chopped)
- 1 (1 1/4 ounce) package hidden valley ranch dressing mix
- 1 (1 1/4 ounce) package taco seasoning mix
- 1 (15 ounce) can pinto beans
- 1 (15 ounce) can hot chili beans
- 1 (15 ounce) can whole kernel corn
- 1 (15 ounce) can stewed tomatoes (Mexican flavor)
- 1 (15 ounce) can stewed tomatoes (any flavor)
Roasted Red Pepper Soup

Roast red peppers over fire or under broiler & put in paper bag for 15 minutes
- 2 Red Bell Peppers
- 1/2 red onion
- 1/2 yellow onion
- 1/4 lb. Butter
- 1/2 C flour
- 1 qt cream
- 1 qt chicken broth
- 1 C tomato past
- 1/4 C cilantor or parlsey or basil
- 1 T pepper
