- Sauce:
- 6 - 6 oz boneless, skinless chicken breasts
- 6 thin slices ham
- 6 thin slices Swiss cheese
- Seasoned bread crumbs
- 1 egg, beaten
- Melted butter
- 1 or 2 cans cream of chicken soup
- 1 C. sour cream
- 1-2 t. lemon juice
- s/p to taste

- 2 breakfast-cut pork chops (about a scant 1/2 inch thick)
- 2 teaspoons olive oil
- 6 cloves garlic, chopped fine
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste

- 3/4 cup dry quinoa
- 1 pint strawberries, sliced (2.5-3 cups)
- 16 oz. fresh blueberries (1.5-2 cups)
- 1 cup cherries, pitted and sliced
- 2 tbsp pure maple syrup (or other liquid sweetener)
- 1 tsp balsamic vinegar (I prefer white balsamic)
- 1 tbsp fresh lime juice (or lemon might work!)
- Pinch of kosher salt
- 1/2 cup almonds, chopped
Protein Pancakes

Nutritional information for the entire recipe excluding toppings, 8 points+
- 1/2 cup fat free cottage cheese
- 1/3 cup uncooked oatmeal (quick cooking or old fashioned)
- 1 egg
- 1 egg white
- 1 Tbsp ground flax seed
- 2 tsp Agave (could use maple flakes, sucanat or brown sugar, etc)
- 1/4 tsp vanilla or coconut extract (sometimes I use both)
- Dashes of cinnamon & salt

- 3 large strawberries at room temperature
- 1 stick butter, at room temperature
- 1/2 teaspoon pure vanilla extract
- 3-4 cups powdered sugar
- 1 tablespoon heavy cream

- 1 tbsp extra virgin olive oil
- –one medium onion, chopped
- –1 tbsp fresh garlic, minced (about 4-6 cloves)
- –1 package of sliced mushrooms (optional)
